Ingrediants
For the cake
- 3 cups of flour
- 4 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 cup of softened butter
- 2 1/2 cups of sugar
- 5 egg whites
- 1 teaspoon of vanilla
- 1 1/2 cups of milk
- Food colors: red, orange, yellow, green, blue and purple
For the Icing
- 3 cups of powdered sugar
- 1 cup of butter
- 1 teaspoon of vanilla
- 1 tablespoon of cream
Steps
Method 1 of 3: Layers
Step 1. Preheat the oven to 180 ° C
Do this first so you can bake the cake as soon as it's ready.
Step 2. Mix the dry ingredients
Sift the flour, baking powder, and salt into a small bowl. Use a whisk to mix them so they blend well.
Step 3. Mix the wet ones
In a large bowl, mix the butter and sugar cream, stirring vigorously with a spatula or mixer. Continue beating or mixing the ingredients by adding the egg whites. Pour in the vanilla and milk and continue to mix until all the wet ingredients are used up.
Step 4. Add the flour mixture
Pour half the contents of the bowl into the bowl with the wet ingredients. Use a spoon to mix and add the rest of the mix with the flour as well. Keep stirring until everything is smooth.
Step 5. Divide and color
Pour the same amount of pasta into six different bowls. Color each with a little food coloring preparation by adding a few drops. Mix well while continuing to add color as needed.
- If you use a gel dye, only a couple of drops will suffice. With the liquid one, on the other hand, you may need a little more.
- If you have a standard food color set with yellow, red, blue, and green, you can make others by combining them together. Orange is obtained by mixing red and yellow, purple with blue and red.
Step 6. Pour the pasta into the greased pan
Each layer must be baked separately. If you have six pans, prepare them and pour the pasta into each. If you have less, bake more.
Step 7. Bake each layer
Place the baking sheets in the oven and cook for 15 minutes, or until a toothpick stuck in the cake comes out clean. Do not over-bake, as you may spoil the colors and not cause the top to darken.
- When the layers are ready, remove them from the oven and let them cool.
- Reuse the baking sheets if you haven't been able to cook everything.
Method 2 of 3: Assemble the Cake
Step 1. Make the icing
In a large bowl, beat the icing sugar with the butter, cream and vanilla until everything is whipped and becoming light and fluffy. If it looks too soft, add more sugar.
Step 2. Prepare the layers
With a serrated knife cut a thin layer from the top of each cake. Eliminating the part that has swollen will cause the layers to stack properly.
Step 3. Icing
Arrange the purple one on a cake stand or tray with which you will serve the cake. Use a spatula or icing knife to pour some over the center of the cake. Spread it evenly over the purple surface towards the edges. Add the blue cake, and glaze the same way. Repeat with green, yellow, orange and finish with the red layer.
- The order of the colors is not mandatory: create your own rainbow by mixing them as you wish.
- Remember that you need to have enough frosting left to coat the entire cake, so don't use it all for the center pieces only.
Step 4. Glaze everything
Pour the cover in the middle of the last layer and spread it all the way to the edges. Use more to finish the sides. Eventually the whole cake will have to be covered with icing. The colors will have to remain hidden and will be the surprise once the slices are cut.
Step 5. Decorate
Finish the cake with Smarties or colored sugar sprinkles, or use another color frosting to write a message.
Method 3 of 3: Make a Flecked Rainbow Cake
Step 1. Preheat the oven to 180 ° C
Step 2. Make the dough
Using the previous recipe, make a white dough. Mix wet and dry ingredients in two different bowls, then combine them.
Step 3. Divide and color the dough
Pour the same amount of dough into six different bowls. Use the food coloring and color it as in the previous recipe.
Step 4. Pour the batter into two greased baking sheets
Make the doses with a cup to pour some red dough. Then add a cup of the yellow one to the same pan. The two colors will touch each other but will not mix excessively. Continue pouring the different colored doughs into the pan until you have used half the contents of each bowl. Repeat with a second pan and the remaining dough.
Step 5. Cook
Place the baking sheets in the oven for about 20 minutes, or until an inserted toothpick comes out clean. When they are cooked, let them cool.
Step 6. Make the icing
Beat the icing sugar with butter, cream and vanilla until everything is whipped and becoming light and fluffy.
Step 7. Assemble
With a serrated knife, cut a thin layer from the top of each cake. Arrange one on a stand or tray with which you will serve the cake. Pour the icing over the cake and spread it evenly with a spatula or icing knife. Place the second cake on top and repeat the glaze. Finish by frosting the whole cake until it is completely covered.
Step 8. Decorate
Add some food glitter, birthday candles, or other decorations. And the cake is ready.
