Step 3. Put half of the sticks in the oil and fry them for 3 to 5 minutes
Slowly dip about half of the sticks into the boiling oil and stir them from time to time. Fry the potatoes until soft but not golden. This should take 3 to 5 minutes.
Step 4. Remove the sticks and fry the other half of the potatoes
Line a plate with a paper towel and place it next to the wok. Remove the fried potatoes from the oil with the help of a slotted spoon and place them on the plate lined with absorbent paper. Heat the oil until it reaches a temperature of 130 ° C and put the remaining sticks to cook. Fry them for 3 to 5 minutes, so that they soften.
Step 5. Heat the oil until it reaches a temperature between 180 and 190 ° C
Remove the last sticks you fried and place them on absorbent paper to get rid of the excess oil. Heat the oil to a medium-high temperature until it reaches a temperature between 180 and 190 ° C.
Don't have a frying thermometer available? Try putting a crumb of bread in the oil. If it starts to sizzle immediately, then the oil has warmed up sufficiently
Step 6. Fry the first half of the fries for 5 to 7 minutes
Once the oil has heated up, slowly dip the first half of the chips into it by moving them away from the paper towel-lined plate. Stir them occasionally during frying, so that they cook evenly. Fry them until golden. This should take 5 to 7 minutes.
