If you like to order crinkle or wavy potato sticks at a restaurant, but would like to learn how to prepare them at home too, all you have to do is choose the cooking method you prefer (frying or baking). Wash and peel the potatoes before slicing them using a special potato cutter with a wavy blade. Roll out the slices and cut them into strips to obtain wavy sticks. Then, fry them in hot oil or bake them until crisp and golden. Try coating them with a mixture of cheese toppings before baking to make them even tastier.
Fry the Wavy Shape Potato Sticks
- 500 g of high starch potatoes
- 1 1/2 cups (355 ml) of cow tallow, lard or peanut oil
- Salt to taste.
Doses for 2-4 servings
Bake the Wavy Shape Potato Sticks in the Oven
- 3 large potatoes or 6 medium potatoes suitable for baking
- Brine water
- Salt for brine
- 60ml canola, peanut, or sunflower oil
- Half a cup (50 g) of grated Parmesan cheese
- Half a teaspoon (1 g) of paprika
- A quarter of a teaspoon (1.5 g) of flavored salt
- A quarter of a teaspoon (1.5 g) of salt
- 1 teaspoon (0.5 g) of fresh basil
- Half a teaspoon (1 g) of garlic powder
Doses for 6 servings
Method 1 of 2: Fry the Wavy Shape Potato Sticks
Step 1. Peel and cut the potatoes
Wash 500g of high starch potatoes and remove the skin with a potato peeler. Take a potato cutter with a wavy blade and cut each potato into slices about 8mm thick. Spread one slice at a time on a cutting board and use the potato cutter with wavy blade to cut it into strips. The sticks can be as wide as you like.
- When choosing a high starch potato variety, try a Russet, King Edward, or Yukon Gold.
- Keep in mind that thin sticks tend to fry faster than larger ones.
Step 2. Heat the oil in a wok until it reaches a temperature of 130 ° C
Measure 1 1/2 cups (355 ml) of cow tallow, lard, or peanut oil and pour it into a wok or large high-sided skillet. Adjust the heat to medium-high and place a frying thermometer on the edge of the wok or pan. Heat the oil until it reaches a temperature of 130 ° C.
In case you don't have a frying thermometer, you can test the temperature of the oil by placing a bread crumb in it. If it starts to sizzle after 10-20 seconds, then the oil has warmed up sufficiently
Step 3. Put half of the sticks in the oil and fry them for 3 to 5 minutes
Slowly dip about half of the sticks into the boiling oil and stir them from time to time. Fry the potatoes until soft but not golden. This should take 3 to 5 minutes.
Step 4. Remove the sticks and fry the other half of the potatoes
Line a plate with a paper towel and place it next to the wok. Remove the fried potatoes from the oil with the help of a slotted spoon and place them on the plate lined with absorbent paper. Heat the oil until it reaches a temperature of 130 ° C and put the remaining sticks to cook. Fry them for 3 to 5 minutes, so that they soften.
Step 5. Heat the oil until it reaches a temperature between 180 and 190 ° C
Remove the last sticks you fried and place them on absorbent paper to get rid of the excess oil. Heat the oil to a medium-high temperature until it reaches a temperature between 180 and 190 ° C.
Don't have a frying thermometer available? Try putting a crumb of bread in the oil. If it starts to sizzle immediately, then the oil has warmed up sufficiently
Step 6. Fry the first half of the fries for 5 to 7 minutes
Once the oil has heated up, slowly dip the first half of the chips into it by moving them away from the paper towel-lined plate. Stir them occasionally during frying, so that they cook evenly. Fry them until golden. This should take 5 to 7 minutes.
Step 7. Remove the fries from the oil and fry the other half
Line another plate with a clean sheet of paper towels and remove the crunchy sticks from the oil with a skimmer. Put them to dry on absorbent paper while you wait for the oil to reach the right temperature again. Fry the remaining fries for 5 to 7 minutes, until crisp and golden.
Step 8. Season the sticks and serve them
Sprinkle a generous amount of salt over the fried potatoes and mix them lightly to coat them evenly. Serve them while they are hot.
Avoid storing them, as they tend to get soggy over time
Method 2 of 2: Bake the Wavy Potato Sticks in the Oven
Step 1. Preheat the oven and prepare a baking sheet
Turn on the oven and set it to a temperature of 205 ° C. Take a rimmed baking sheet and grease the surface with 2 tablespoons of oil. The oil will prevent the fries from sticking and will make them crunchy as they cook. Set the pan aside.
You can use canola, peanut, or sunflower seed oil
Step 2. Peel and cut the potatoes
Wash 3 large potatoes or 6 medium potatoes and remove the skin with a potato peeler. Take a potato cutter with a wavy blade and cut it into slices about 8 mm thick. Spread the slices out onto a flat surface and cut them into strips. The sticks can be as wide as you like.
Step 3. Soak the potatoes in salted water for 10 minutes
Get a bowl that is large enough for the potatoes. Fill it about three-quarters full with cold water. Add enough salt to cloud the water. Take the sticks and soak them in salt water for 10 minutes.
For example, if you used 4 cups (950 ml) of water, you should add about half a cup (150 g) of salt
Step 4. Drain and dry the sticks
Line a large plate or tray with a few sheets of blotting paper. Remove the potatoes from the salted water and spread them on the paper. Blot them until dry.
Step 5. Prepare the mixture for seasoning the potatoes
Take a large bowl and pour half a cup (50g) of grated Parmesan into it. Add the remaining seasonings and mix everything together until you get a homogeneous mixture. You will need:
- Half a teaspoon (1 g) of paprika;
- A quarter of a teaspoon (1.5 g) of flavored salt;
- A quarter of a teaspoon (1.5 g) of salt;
- 1 teaspoon (0.5 g) of fresh basil;
- Half a teaspoon (1 g) of garlic powder.
Step 6. Sprinkle the dressing over the potatoes and arrange them on the baking sheet
Place the dry sticks in the same bowl as the seasoning mixture and mix everything until coated. Distribute the potatoes evenly on the baking sheet you prepared earlier, creating a single layer. Pour the last 2 tablespoons (30 ml) of oil over the potatoes.
Step 7. Bake the seasoned sticks for 25 to 30 minutes
Place the pan in the oven and cook the potatoes until crisp and golden. This should take around 25-30 minutes. Serve them while they are hot.
