Preparing the perfect pasta is an essential skill in the kitchen. Preparing great spaghetti is all a matter of timing, from the first time you mix them to when you add them to the sauce.

Part 1 of 2: The Perfect Water for Pasta
Step 1. Make sure you have a large pasta pot
A saucepan of about 6-7 l or even larger will allow you to cook half a kilo of pasta. Cooking the pasta in more water than necessary is a useful trick to prevent the pasta from sticking.
Step 2. Pour 5 to 6 liters of water into the pot for every 400g of spaghetti
Excess water will allow the pot to quickly return to a boil after adding the raw pasta.

Using a lot of water is extremely important when cooking long pasta, such as spaghetti and fettuccine. This format needs space to move inside the pot without sticking to its walls.
Step 3. Add 18g of salt when the water comes to a boil
Salt water will give the pasta flavor.
Step 4. Do not add oil
If you pour oil over the spaghetti, you will prevent the sauce from sticking to the surface of the pasta. It also increases the likelihood of the dough sticking.
Part 2 of 2: The Perfect Spaghetti
Step 1. Stir the pasta within a minute or two of adding it to the pot
Set a timer so the pasta doesn't stay raw or overcooked.
Step 2. Do not close the pot with the lid, so that the pasta cooks evenly and that the water does not overflow due to excessive boiling
Step 3. Taste your spaghetti two minutes before the timer rings
At this point it should be al dente.
Step 4. Drain the spaghetti as soon as they are ready
During cooking, the pasta releases starch into the water. To prevent the spaghetti from sticking it is necessary to drain them immediately.
Step 5. Do not rinse the spaghetti
You would make them stick because the starch would dry on the dough making it sticky.
Step 6. Immediately pour them into the hot sauce after draining
The sauce will mix with the pasta, preventing it from sticking. The result should be an appetizing dish of soft and smooth pasta.
