Are you ready for one of the most sinful and delicious sweets there is? This Baileys cheesecake will be really hard to resist! You can use this recipe as a base to create many different types of cheesecake, including the original chocolate version, or hazelnut, mint, caramel and coffee chocolate! Follow the recipe step by step, or add a personal touch to make it special! In any case, it will be a mouth-watering cheesecake! Here's how it's done:
Ingrediants
- 380g of butter biscuits
- 4 tablespoons of softened butter
- 450g of ricotta
- 220g of cream cheese
- 4 eggs
- 120g of sugar
- 75g of Baileys
- 1 teaspoon of vanillin
- 1/4 teaspoon of salt
Steps
Step 1. Collect all the ingredients
Weigh everything before you start, so the preparation will be easier and more fun.
Step 2. Prepare the base of the cake
Use butter cookies to get a tastier, crisper crust!
-
Butter a springform pan (you can also use vegetable oil if you prefer).
-
Chop the cookies, then add the softened butter and mix well until they are completely blended. At this point, spread the mixture into the springform pan, squeezing it on the bottom and sides. Place the pan in the refrigerator to cool the base and solidify the butter while you prepare the rest.
Step 3. Preheat the oven to 165 degrees
Do not delay this step. If you turn on the oven now, when you have assembled the various parts of the cheesecake, you can put it in the oven right away.
Step 4. Prepare the dough
It's time to let the chef inside you come out!
-
Combine the ricotta with the cream cheese, mixing well until the mixture becomes smooth.
-
Add the other ingredients, continuing to mix to make the mixture uniform.
Step 5. Assemble the cake
Pour the mixture into the springform pan.
Step 6. Bake the cheesecake for 1 hour and a quarter, or until cooked
To make sure it's ready, insert a toothpick in the center of the cheesecake; if it's dry, you can take it out of the oven.
-
Place a pan full of water under the cheesecake in the oven to prevent cracks in the dough.
Step 7. Now it has to cool down
It's tempting, but before tasting it, you need to let the cheesecake cool in the mold for about 30 minutes.
Step 8. Open the mold
When the cheesecake has cooled, remove it from the mold and allow it to cool completely.
Step 9. Enjoy your meal
Method 1 of 1: Tips
- Try different types of Baileys to find the one you prefer.
- You can try making small changes using different ingredients. For example, replace the ricotta with pureed pumpkin, or add some typical pumpkin pie spices, such as cloves, cinnamon or allspice: combining these spices with the flavor of Baileys, you will get a spectacular result.
- Use the mint Baileys, then add a few drops of red food coloring to the mixture after pouring it into the mold: this way, you will get a streaked effect similar to sugar candies!
- Add ingredients and toppings to enhance the flavor of your cheesecake.
