If you like lentils, this is an alternative way to eat them. Lentils germinate easily like other legumes. The taste of lentil sprouts is reminiscent of that of fresh peas; you can eat them alone, add them to salads or even combine them with the filling of a sandwich.
Steps
Part 1 of 3: Prepare the Lentils
Step 1. Choose the lentil variety you prefer
You can use all types of lentils: brown, green or red.
Step 2. Wash them thoroughly
Put them in a colander and rinse them under cold running water. Remove any pebbles.
Part 2 of 3: Soak the Lentils
Step 1. Pour them into a large clean glass jar, then fill it with warm water
Step 2. Cover the jar
Cover the mouth of the jar with a muslin cloth. Secure it to the edge using a rubber band or piece of string. Do not use a solid lid as it does not allow air to pass through.
Step 3. Leave the lentils to soak
Find a warm place to soak the lentils for at least 8 hours.
Place the jar near the stove or in another hot spot in the house to help germinate the lentils
Step 4. Drain the lentils
The next day, drain them from the soaking water. Pour them into a colander and let them drain for a few minutes. Alternatively, you can simply turn the jar upside down (without removing the muslin cover).
Part 3 of 3: Sprouting the Lentils
Step 1. Stimulates germination
Return the lentils to the jar, turn it on its side, and store it in a warm spot in the house. Make sure it is out of direct sunlight.
Step 2. Rinse the lentils regularly
Once a day, take them out of the jar and rinse them thoroughly. The water is used to keep them moist and to favor the germination and then the growth of the shoots. Discard any lentils that have not yet germinated (started sprouting) and return the sprouts to the jar for them to grow.
Step 3. Use the sprouts
When they have reached 3 cm in length they are ready to be eaten. They generally reach the right height after 2-3 days.
Step 4. Experiment with different combinations
Lentil sprouts can be used in many ways; for example, you can add them to soup or stew, stir-fried vegetables or salad. They are also excellent for enriching a vegetarian sandwich. Many people also like to eat them alone when they are craving a healthy snack.
