These cabbage dumplings are perfect to brighten up any type of meal: greedy, ethnic or vegetarian; it will be sufficient to modify the ingredients used to prepare the filling. If you prefer, add them to a soup during the last few minutes of cooking. Enjoy your meal.
Steps
Method 1 of 3: Prepare the Cabbage
Step 1. Bring water to a boil in a pot, then add the cabbage to soften the leaves
Cook it in boiling water for about 15 minutes or until you can remove all the leaves.
Step 2. With a small knife, divide the midrib of the leaves in half to be able to roll them up
The central vein of the cabbage leaves tends to break due to the thick density of the vegetable.
Step 3. Remove the top leaves carefully
After removing enough leaves, set them aside.
Method 2 of 3: Prepare the Filling
Step 1. You can stuff your cabbage with beef, rice and tomatoes
Brown the ground beef, cook the rice and mix both with peeled, pan-fried tomatoes and spices to taste. Season with salt and pepper.
The amount of beef and rice varies according to the number of diners. 450g of ground beef, 110g of uncooked rice, and a package of peeled tomatoes should be enough for a family of three or four
Step 2. Alternatively, you can stuff your cabbage with pork, sauerkraut and pickled gherkins
Brown the minced pork, slice the gherkins and mix the two ingredients with the sauerkraut. Seasoning may not be necessary, but you can decide to experiment with adding pepper or celery salt.
The amount of pork varies according to the number of diners. 675g of ground beef, 150g of sauerkraut and 2 large sliced gherkins should be enough for a family of three or four
Step 3. You can also stuff your cabbage with quinoa, onion and lime
Slice or chop the onion and fry it in butter or oil accompanying it with fresh dry garlic. Blend the quinoa fried onion and cook it. When the quinoa is cooked, add a tablespoon of lime juice.
The amount of quinoa varies according to the number of diners. 480g cooked quinoa and 1 medium sized onion should be enough for a family of three or four
Method 3 of 3: Complete the Plate
Step 1. Stuff the cabbage leaves
Fill each cabbage leaf with a small amount of your chosen filling. Arrange the filling in the center of the leaf in an oval shape perpendicular to the midrib.
Step 2. Roll up the leaves
Roll the cabbage leaves to wrap the mixture placed in the center, then set them aside.

Start at the bottom, at the base of the midrib, and then move to the top of the leaf.

When you have reached the middle of the leaf, fold the two sides towards the center.

Continue rolling until the leaf is completely closed.
Step 3. Serve the stuffed cabbage

Advice
After removing the leaves you intend to stuff, chop up the remaining parts and use them to make a delicious cabbage soup
Warnings
- Don't overdo the amounts of filling for each leaf, or your rolls will pop open letting it pop out.
- Close the cabbage rolls with a toothpick to keep the filling inside.
- As you roll up the leaf, fold both sides inwards, so you don't need to use toothpicks.
