Don't pay attention to the ready-made spice mixes on sale in the supermarket. In all likelihood, in the pantry you have all the spices you need and you can easily mix them in total autonomy. By making a blend from scratch, you can adjust the spice quantities to your personal tastes and save some money. Prepare, store and use your own custom spice blend to make pumpkin pie and many other delicious desserts, roasted vegetables or coffee.

Method 1 of 2: Prepare and Store the Spice Blend
Step 1. Measure the spices and pour them into a bowl
Measure 1 tablespoon (8 g) of ground cinnamon, 2 teaspoons (2 g) of ginger powder, half a teaspoon (1 g) of allspice, half a teaspoon (1 g) of ground cloves, half a teaspoon (1 g)) of mace (spice obtained from the nutmeg casing) or cardamom powder and half a teaspoon (1 g) of nutmeg. Pour the spices into a bowl or deep plate.
- You can buy ground spices in powder form, but if you grind them at the moment the mixture will have a more intense taste.
- If pumpkin pie is one of your favorite desserts, you can double or triple the ingredients easily and store the spice mixture in a large glass jar.
Step 2. Stir the spices with the whisk until well blended
Break up the lumps and keep stirring until the mixture is a uniform brownish color.
If you don't have a whisk, you can use a spoon or fork
Step 3. Store the spice mixture at room temperature in an airtight container
Use an empty glass jar or spice container with an airtight lid. Keep it out of direct sunlight so the spices retain their flavor longer.
- Use a small funnel to more easily transfer the spice mixture into the jar or container.
- Place the date on the jar and try to use the spice mixture within a year.
Method 2 of 2: Using the Spice Blend
Step 1. Use a scant 2 teaspoons of the spice mixture when making pumpkin pie
Instead of dosing the cinnamon, ginger and cloves each time according to the directions in the pumpkin pie recipe, use your ready-made mixture. Add the spices to the dough and bake the cake in the oven following the instructions given by the recipe.
Step 2. Add a teaspoon of the spice mixture to the whipped cream or to icing.
This spice blend isn't just for making pumpkin pie. For example, you can use it to make buttercream or whipped cream even more delicious. The spice mix should be added before you start whipping cream or icing.
Try adding the spice mixture to fresh cheese as well. Let it soften at room temperature and then blend it with the spice mix and sugar. You will get a delicious cream that you can spread on bread or bagels
Step 3. Add spices to coffee or hot chocolate
Prepare the coffee as you normally do, but add one tablespoon (6 g) of the spice blend to the ground coffee. The spices will flavor the coffee during extraction. If you prefer, you can add half a teaspoon of the spice mixture to the hot chocolate.

Step 4. Add half a teaspoon of the spice mixture to your baked goods dough
Use half a teaspoon for every 250g of dough and add it along with the other dry ingredients. Pumpkin Pie Spice Mix is suitable for all baked goods that require short cooking, such as pancakes, waffles, and muffins.
Try adding the spice mixture to the granola. You can use maple syrup as a sweetener for a perfect Anglo-Saxon-style breakfast
Step 5. Add 2 teaspoons (4 g) of the spice mixture to the roasted vegetables
Cut the vegetables into cubes or sticks, put them in a baking dish and sprinkle them with extra virgin olive oil and spices. Bake them in the oven at 175 ° C for 20-40 minutes.
- You can use a combination of carrots, onions and sweet potatoes.
- You can also add the spice mixture to a vegetable soup, such as potatoes, cauliflower, squash, or sweet potatoes.
Step 6. Season 100g of popcorn with a couple of tablespoons (10g) of the spice mixture
Make popcorn or buy it ready-made and pour it into a large bowl. Sprinkle them with the melted butter and spice mixture, then mix them with your hands or a spoon to distribute the aromas.
