Chicken or pork adobo is one of the typical dishes of Filipino cuisine. You can learn how to prepare it at home by following the instructions in this article; But know that you can replace meat with fish or vegetables. The four basic ingredients are: vinegar, soy sauce, pepper and dried bay leaves.
Ingrediants
- 1-1.5 kg of chicken or pork (pork belly and shoulder are the most suitable cuts)

- 1 onion, peeled and finely sliced
- 120 ml of vinegar
- 80 ml of water
- 80 ml of soy sauce
- 2 bay leaves
- Salt and Pepper To Taste.

Part 1 of 2: Prepare the Ingredients
Step 1. Cut the pork into chunks
It is not necessary to chop the chicken, you can cook the thighs or the whole thighs; always wash your hands after handling raw meat.
Step 2. Peel and slice the onion
Cut it lengthwise and peel it. Place the flat side on the cutting board and continue to finely slice the two halves.
Step 3. Peel and cut the garlic
Clean four wedges and use the flat side of the blade to mash them before chopping.
Step 4. Combine the soy sauce, vinegar, garlic, and pepper in a large bowl
Taste the mixture to see how much pepper to add.
Step 5. Marinate the meat for one hour
Cover the bowl and place it in the refrigerator; one hour is the time it takes for the meat to absorb the flavors, but if you are in a hurry you can cut the wait by half; if you don't have time problems, you can let the ingredients rest for a whole night.
Part 2 of 2: Cook the Chicken or Pork Adobo
Step 1. Transfer the meat and marinade to a high-sided skillet
Put it on the stove over medium heat, add the bay leaves and onion.
Step 2. Simmer the ingredients for 15 minutes
Flip the meat once during cooking and turn the heat down if the liquid starts to boil.
Step 3. Transfer the sauce to a bowl
Remove the pan from the heat carefully and pour the liquid into a bowl; you can use the same one in which you marinated the meat. Be careful that the meat does not fall out of the pan during this operation.
Step 4. Add oil to the pan
One tablespoon of olive or rapeseed should be enough to prevent the meat from sticking.
Step 5. Brown the chicken or pork on all sides
Use medium heat, but don't be afraid to turn up the heat if cooking seems too slow; it may take 10-20 minutes.
Step 6. Return the sauce to the pan
Transfer it carefully and bring it to a boil.
Step 7. Let it simmer for 20-30 minutes over medium heat
After this time the meat should be tender and the sauce thick, of a deep brown; also, the chicken or pork should be perfectly cooked.
Step 8. Add salt and pepper according to your taste
Taste the sauce to figure out whether to increase the doses.
Step 9. Serve the adobo over the rice
You can use a rice cooker to prepare 400-600 g of brown or white rice, depending on the number of diners; typically, 200 g of rice is enough for two people.
