Steps
Method 1 of 2: Collect the Cooking Juices
Step 1. Be aware that pork gravy is made with pork gravy
Therefore, in order to collect the juices of the meat, you will necessarily have to cook it. Choose one of the following cooking methods.
- Make Roast Pork: Select your favorite cut of pork and arrange it in an ovenproof dish with the fattest side down. Preheat the oven to 200 ° C). When the oven is hot, place the pan with the pork in the oven. Roast the meat for 30 minutes and then turn it over with the fatty side facing up. Rotating the meat allows for even cooking. Remove the meat from the oven and let it rest for 10 minutes.
- Sauté the pork in the pan: Season the pork chops with salt and pepper on both sides. Heat the butter in a large skillet over medium-high heat. If you prefer, you can replace the butter with extra virgin olive oil. Arrange the pork in the pan and cook completely until golden on both sides. This will take about 3 - 5 minutes. The pork will be ready when it has turned white in the middle.
Step 2. Collect the juices produced during the cooking of the meat
Lifting the meat from the pan or pan, let it drain for a few seconds. This way you will be able to collect all the juices released by the meat.
Step 3. Pour the cooking juices into a transparent measuring cup
You will be able to see the fats separating from the liquid part. Wait for all the fat to float on the surface of the liquid.
You can replace the dispenser with a small saucepan
Step 4. When the separation is complete, remove the fat from the surface of the juices
Store about 3 tablespoons of fat and pour it into a separate saucepan, you'll need it to make gravy.
Method 2 of 2: Make Gravy Sauce
Step 1. Put the fat back on the heat
You should have 3 tablespoons of fat in a saucepan. Heat it on the stove and add 3 tablespoons of flour. Stir to combine the two ingredients.
Step 2. Cook the flour and fat over medium heat
You should cook the mixture for a minute or two, stirring constantly. Don't forget to continue incorporating any parts that tend to stick to the bottom or sides of the pan.
Step 3. Add the necessary ingredients
You want to make 500ml of sauce. Measure the cooking juices contained in the dispenser and then pour them into a bowl. Add the ingredients of your choice to reach the desired amount of 500ml.
- You can use pork broth for a savory and defined flavor recipe.
- Add sherry if you prefer a red-tinted sauce with a sophisticated flavor. Gravy sauce improves in the presence of an acid component. The wine and sherry add intensity to the flavor of the sauce by giving it greater acidity.
- Some people prefer to add creamy mushroom soup to the cooking juices.
Step 4. Add the cooking juices to the fat and flour mixture
Stir and heat the two blends over medium heat. The gravy should take on a smooth, thick consistency. Add salt and pepper to taste.
If the sauce isn't as thick as you want, you can add another tablespoon of flour
Step 5. Pour the gravy over the pork and any other accompanying dishes you have prepared
Enjoy your meal!
