Egg noodles are easy to make and can even be frozen for later use.
Ingrediants
- 350 g of flour
- 4 large eggs
- 1 pinch of salt
Steps
Step 1. Pour 200-300 g of flour into a large bowl
Make a small hole in the middle by giving it a conical shape. This will help blend the moist ingredients into the dough.
Step 2. Add a pinch of salt by spreading it over the flour
Step 3. Break 2 eggs and pour them into the conical hole
Step 4. Stir evenly, but gently, with a spoon
If you don't worry about sticky hands, wash them and use them to knead the mixture more effectively.
Step 5. You will know the dough is ready when it takes on the consistency of wet Play-Doh
TM. Wrap it in cling film and let it sit for 20 minutes so the gluten can relax. The rest will favor a better kneading of the dough.
Step 6. Flour the work surface to prevent the noodles from sticking to the surface
Step 7. Remove the dough from the bowl and transfer it to the floured surface
Roll it out with a rolling pin working it from the center outwards.
Step 8. When the dough has reached a thickness of about 7 mm, cut it into strips with a pizza wheel or a large knife
Step 9. Cook the noodles in boiling water or chicken broth until they float to the surface
Step 10. Finished
Advice
- For an easier cut, flour the dough after rolling it out, then fold it on itself giving it a cylindrical shape. Cut it sideways into thin discs and then reopen it to get your noodles.
- If you want to make a delicious noodle soup, cook them in chicken broth with the addition of vegetables and meat (dip them in the pot when the other ingredients are already cooked).
