Having a burrito breakfast can be a tasty, practical and fun way to start the day. As you can imagine, there are many recipes and methods at your disposal. The ingredients and cooking techniques used in this article are particularly suitable for preparing a "classic" burrito.

Ingrediants

  • 2 eggs
  • Peppers, onions, tomatoes, mushrooms (diced)
  • Sausage / Ham / Bacon (diced)
  • Milk or a mixture of milk and cream in equal proportions (just enough to make fluffy scrambled eggs)
  • Tortilla (large)
  • Rice (optional)
  • Beans (optional)
  • Avocado (optional)
  • Seasonings to taste (optional)

Steps

Part 1 of 3: Prepare the Ingredients

Step 1. Break two eggs into a clean bowl

Beat them with a fork or whisk to mix the egg whites with the yolks, but no longer than 20 seconds. Whipping them for a longer time would risk making them too thick.

  • Consider adding a few tablespoons of milk, or half milk and half cream, to add a softer texture to scrambled eggs. Water also performs the same function, equally in small quantities.
  • Consider adding cheese to the eggs. The grated or flaked one is ideal. Choose a mild-tasting variety of cheese that can blend easily.

Step 2. Finely slice the vegetables

You can use the ones you already have in the fridge or you can buy more specifically for this recipe. The most used ingredients to prepare a breakfast burrito are:

  • Raw, roasted peppers and hot peppers;
  • Onions, of any variety, cooked;
  • Raw ripe tomatoes, but be careful because if they are very juicy they can wet the tortilla;
  • Fresh, clean mushrooms of any variety;
  • Diced cooked potatoes for a hearty burrito (most vegetables don't need to be cooked, but potatoes do).

Step 3. Add some meat

Unless you are a vegetarian, enrich your burrito with a variety of meat of your choice. The classic breakfast recipe is based on the ingredients eaten in the morning by the Anglo-Saxon peoples: pancetta (or bacon), ham, chorizo and sausages. If you wish, you can use any other type of meat, even non-pork, such as chicken, beef or turkey.

Cook meat with vegetables, unless there are vegetarians among your diners. In the latter case it is mandatory to cook the ingredients separately

Step 4. Cook the rice and beans

Rice and beans are two optional ingredients when it comes to making a breakfast burrito, but many consider them to be two indispensable elements of the recipe. However, nothing prevents you from adding rice only or beans only.

  • Unless you cooked it in advance, the rice will need more cooking time than the beans. Nonetheless, it has the advantage of adding a significant amount of carbohydrates to the burrito.
  • Beans require simpler preparation. If you are short on time, you can also limit yourself to heating canned ones for a few moments in a saucepan. If you want you can also pour them directly into the pan with the vegetables or heat them even more quickly in the microwave and then add them to the burrito separately.

Step 5. Mash an avocado

Choose a ripe one, remove the peel, then mash it as if you were making guacamole. Avocado is an optional ingredient, but it allows you to add fantastic flavor and texture to the burrito filling. To appreciate all its freshness, open it only after having cooked all the ingredients, when you are ready to assemble your preparation.

  • If you only used a small part of the avocado, you can keep the rest in the refrigerator, covered, after sprinkling it with a few drops of lemon juice.
  • If you have opted for a vegetarian recipe, you can use avocado as the main ingredient of the burrito, it will make it more nutritious and substantial. Avocado is often used as a meat substitute in vegetarian recipes.

Part 2 of 3: Cook the Ingredients

Step 1. Cook them in sequence

Be aware that some ingredients cook slower than others. Start with the rice, then move on to the potatoes and beans. At this point, you can start cooking the meat, unless you have chosen a pre-cooked preparation or that does not require cooking. Simultaneously grill the peppers, onions, tomatoes, mushrooms and any other easy-to-cook vegetables. Scrambled eggs should be prepared last as they cook very quickly.

If you have chosen to use a variety of meat that is pre-cooked or that does not need cooking because it is seasoned, you can still grill it for a few seconds along with the vegetables. Sausages and bacon can also be cooked rather quickly on the grill or in a pan

Step 2. Prepare the scrambled eggs

If you want eggs, meat and vegetables to remain separate, you can scramble the former in one pan and cook the other ingredients in another. If not, you can add them to the eggs directly in the bowl, mix briefly, and cook them all together in one large pan.

As another alternative, you can mix all the ingredients in the bowl with the eggs and then put it in the microwave for about three minutes. The exact cooking time is difficult to determine in advance, the advice is to check the ingredients after the eggs have started to swell. Don't let them grow too large and come out of the bowl

Step 3. Cook the meat and vegetables

Place the meat and vegetable cubes in the pan, then cook for several minutes over medium heat. You can flavor the ingredients as you like with spices, herbs, and other seasonings of your choice. If you want, you can also add the eggs to scramble them together with the filling of the burrito.

You can also add some tomato sauce to further enrich the flavor of the recipe. Pour it directly into the pan along with the other ingredients, but be careful not to overdo the quantities otherwise the tortilla will get wet and risk breaking

Part 3 of 3: Wrap the Burrito

Step 1. Make the tortilla

Choose a large and fragrant one, then place it on a flat plate or kitchen cutting board for a stable surface to work on. You can spread it with a sauce of your choice, for example with sour cream. If you have decided to add some cheese as well, you can sprinkle it on the tortilla either now or after adding the other ingredients. The sauce can also be added only at the end.

Consider reheating the tortilla before filling it. You can put it in the microwave for about thirty seconds or heat it directly on the stove over low heat, being very careful not to burn it. Remember that it must be hot, but not crunchy

Step 2. Arrange the filling on the tortilla

Add the eggs, vegetables, meat, rice, beans, avocado, and whatever else you have prepared to fill the burrito. Try not to overdo the quantities otherwise it will be impossible to close it! Arrange the ingredients in a single thin line along the diameter of the tortilla, leaving at least five centimeters free on each side and at least two or three at each end.

Step 3. Add the last few ingredients

If you haven't added the cheese or sauce yet, do so now. Sprinkle the cheese over the filling, then spread sour cream or your favorite sauce next to it. If you wish, now is the time to add a very personal note to your breakfast.

Step 4. Roll up the burrito

First, fold the larger sides of the tortilla inward; at this point, roll up the burrito from the base. This way you should be able to "seal" both ends to make it easier to eat.

Consider grilling it for a few moments. If you want to add even more flavor to the recipe, place it in a pan or on a hot grill to slightly heat it on the outside. About 20-60 seconds at high heat will be enough to make it more compact and even tastier

Advice

  • Fry some potato croquettes and add them to the filling!
  • Set your creativity in motion! Experiment with new combinations to stimulate your palate and those of your diners.
  • Try frying the vegetables after cutting them into cubes. As soon as they are ready, pour the eggs into the pan, then scramble them as usual, incorporating the vegetables. Once ready, transfer them to the tortilla.
  • The most fearless can use fried potatoes with the addition of finely chopped onions and jalapenos peppers.
  • Add some pepper, oregano, or another spice or herb of your choice to add even more flavor to the recipe.

Warnings

  • Don't add too much milk or too much cream, or you won't be able to cook the eggs properly.
  • Always be cautious when taking something out of the microwave, wear oven mitts to avoid burning yourself.
