Celery soup is great on cold autumn and winter evenings, plus it's very tasty and creamy. It is a simple preparation that goes with bread.

Ingrediants

  • 1 bunch of celery
  • 1 onion, peeled and chopped
  • 15 g of butter, margarine or oil (the best is olive oil)
  • 900 ml of vegetable broth or water
  • Salt to taste.
  • Freshly ground pepper to taste

Step 1. Wash the celery

Cut it into small pieces. Discard most of the leaves but keep some.

Step 2. Fry the chopped onion in oil in a large pot

Do not let it caramelize and use a low heat for about 5 minutes.

Step 7. Bring to the table

You can add grated cheese or decorate it with some leaves that you had kept at the beginning.

Advice

  • If you want a really creamy soup, add a couple of tablespoons of cream when blending. You can also add some cheese (always in the same preparation phase) if you want a stronger taste.
  • If you prefer a more full-bodied soup, don't blend it. Soft celery is delicious even if some may find it a bit "slimy", so be careful!
