Celery soup is great on cold autumn and winter evenings, plus it's very tasty and creamy. It is a simple preparation that goes with bread.
Ingrediants
- 1 bunch of celery
- 1 onion, peeled and chopped
- 15 g of butter, margarine or oil (the best is olive oil)
- 900 ml of vegetable broth or water
- Salt to taste.
- Freshly ground pepper to taste
Steps
Step 1. Wash the celery
Cut it into small pieces. Discard most of the leaves but keep some.
Step 2. Fry the chopped onion in oil in a large pot
Do not let it caramelize and use a low heat for about 5 minutes.
Step 3. Add celery and continue stir-frying for another 5-10 minutes
Stir occasionally to prevent the onion from burning.
Step 4. Pour the broth or water into the pot
Cover and simmer for 30 minutes. The celery should be soft once this time has elapsed.
Step 5. Remove the pot from the heat
Wait for it to cool down a bit. Pour the soup into the blender or food processor. Blend until smooth and creamy. Season to taste.
Step 6. Put the soup back into the pot
Heat the preparation a little; it must not boil again but warm up to be tasty.
Step 7. Bring to the table
You can add grated cheese or decorate it with some leaves that you had kept at the beginning.
Advice
- If you want a really creamy soup, add a couple of tablespoons of cream when blending. You can also add some cheese (always in the same preparation phase) if you want a stronger taste.
- If you prefer a more full-bodied soup, don't blend it. Soft celery is delicious even if some may find it a bit "slimy", so be careful!
