Eggs are tasty and cheap, so it's important to know how to cook them to perfection. Scrambling them in the pan is very simple. First you have to beat them in a bowl with the addition of a little milk if you want to make them even more creamy, then melt the butter in a pan and start cooking the eggs, stirring them constantly as they slowly congeal. Take them off the heat when they have reached the desired consistency and eat them immediately to enjoy them at their best.
Ingrediants
- 2 eggs per person
- 1 teaspoon of butter
- 1 1/2 tablespoons milk or cream (optional)
- Salt and pepper to taste
Yield: one portion
Steps
Method 1 of 3: Prepare Scrambled Eggs on the Stove
Step 1. Beat the eggs in a bowl using a fork or whisk
Decide how many servings of scrambled eggs you want to make and use a couple per person. Break the eggs, pour them into a bowl and beat them until the yolks are blended with the egg whites.
When it's time to break the eggs, tap them gently against a flat surface instead of the edge of the bowl to prevent small pieces of shell from ending up in the pan
Did you know that?
Just add a little salt to raw eggs to make them softer, but unfortunately they could take on a slightly greyish color during cooking.
Step 2. Add milk or cream to make them creamier
Scrambled eggs are good in their own right, but you can make them even richer and creamier by simply adding one and a half tablespoons of milk or cream. You can also use half milk and half cream or a milk of vegetable origin.
If you are on a diet you can use skimmed or low-fat milk
Step 3. Melt the butter in the skillet over medium-high heat
Pour a teaspoon into a small non-stick pan and turn on the stove. Let the butter heat up and melt until it forms a light foam; it will take about a minute. When the butter has melted, tilt the pan to spread it evenly across the bottom and sides.
- If you want to save calories, you can use extra virgin olive oil or coconut oil instead of butter.
- If you want scrambled eggs to have an even softer texture, you can pour them into the pan at the same time as the butter.
Step 4. Add the eggs and reduce the heat
Slowly pour the beaten eggs into the pan. In contact with the hot butter they should start to sizzle immediately; then reduce the intensity of the flame to prevent them from cooking too quickly.
Step 5. Stir and cook the eggs for 3-4 minutes
Use a silicone spatula or wooden spoon to stir them constantly as they cook. Keep flipping them until they begin to clump and peel off the sides of the pan. If you want them to have a firm texture, cook them for 3-4 minutes.
If you want the eggs to remain soft and creamy even when cooked, after half a minute move the pan from the hot stove and stir them for about thirty seconds off the heat. Put the pan back on the stove for 30 seconds and proceed in this way managing the cooking in alternating phases, never stopping stirring, until the eggs reach the consistency you want
Advise:
Stir quickly and vigorously if you want the scrambled eggs to have a smooth, even texture, or slowly and gently if you prefer a more rustic version of the recipe.
Step 6. Serve the eggs immediately
Turn off the stove and quickly transfer them to plates before they have time to cool. Season them to taste with salt, pepper and fresh chopped aromatic herbs, then serve them on the table accompanied for example by toast, crispy bacon or fresh fruit.
Scrambled eggs are not suitable for storage, so it's best to throw away any leftovers
Method 2 of 3: Prepare Scrambled Eggs in the Microwave Oven
Step 1. Pour the eggs, milk and seasonings into a microwave safe bowl
Use a rounded container inside. Break the two eggs and add one and a half tablespoons of milk or cream, salt and pepper.
If you want you can also add other spices or herbs to taste
Step 2. Beat the eggs
You can use a fork or small whisk to mix the egg yolks, whites, milk or cream and seasonings. Keep stirring until the mixture is uniform.
Step 3. Microwave the eggs for 90 seconds on maximum power
Place the bowl in the oven and turn it on for 30 seconds, then open the door and stir the eggs before cooking them for another half minute. Stir again and then set the last 30 seconds on the oven timer.
Gradually the eggs will begin to thicken. Cook them until they have completely set
Step 4. Add some butter for a richer texture and taste
Remove the bowl from the microwave and eat the scrambled eggs while they are still hot. If you want to make them more creamy and greedy, you can add a teaspoon of butter when they are hot, so that it melts easily.
Advise:
If you want to flavor scrambled eggs with a fresh herb, add it after cooking. Try using parsley, chives, or basil.
Method 3 of 3: Possible Variations to the Classic Recipe
Step 1. Add a creamy dairy product to make the eggs even softer and tastier
To stop cooking and give scrambled eggs an even richer taste, add a generous spoonful of a cold, creamy dairy product of your choice. You can try using a spreadable cheese, fresh or sour cream, mascarpone, cottage cheese, or ricotta.
If you intend to use a cream cheese, preheat it in the microwave for 10-20 seconds to make it even softer and prevent it from forming small lumps once added to the eggs
Step 2. Add your favorite cheese to make the dish even better
Many people like to add a handful of grated cheese to beaten eggs before cooking, others prefer to add it once cooked. You can use a single cheese or combine several. Experiment with different combinations using for example:
- Fontina.
- Mozzarella cheese.
- Gorgonzola.
- Parmesan.
- Goat cheese.
- Smoked scamorza.
Step 3. Make the dish even tastier and complete with meat
Unless it's already cooked, place it in the pan before the eggs. For example, you can use pieces of bacon or sausage. If, on the other hand, you prefer to use frankfurters or another type of pre-cooked meat, you can add it to the eggs when there is one minute left to cook, as it will only need to heat up.
Proposals for those who want to add meat or fish:
Bacon
Dried ham
Sausage
Smoked salmon
Step 4. Use fresh herbs to add flavor without adding calories
Chop and add them to the eggs once cooked. You can use just one variety or mix and match the ones you like best. Experiment with the best known ones, such as parsley, basil, chives, oregano or dill.
For convenience, you can use a ready-made pesto, such as basil or fennel. Keep in mind that it will likely have a much more intense taste than just herbs and will also vary the color of the eggs
Step 5. Complete the dish with your favorite sauce or spice
After transferring the scrambled eggs to the dishes you can sprinkle them with a spice of your choice, if you don't want to just use salt and pepper. You can use an exotic blend, such as za'atar or garam masala. If you prefer, you can add a sauce such as classic green sauce, soy sauce, sriracha sauce or Worcestershire sauce.
