Oysters are considered a delight in many parts of the world. This article teaches you how to open their shells and eat them.
Steps
Step 1. Start by inspecting the oysters and choosing the ones that are tightly closed
Mollusks with open shells must be thrown away, as they are dead and therefore inedible.
Step 2. Wash them quickly before serving
Step 3. Keep them pressed on a flat surface using a tea towel
Step 4. Use an oyster knife with hand guards and insert the tip into the small hole at the "hinge" that joins the shells
Move the knife and push it inside the mollusk to break the union between the two half shells.
Step 5. Tilt the blade upward as you push to sever the abductor muscle that holds the mollusc adhering to the superior valve
Remove the latter by holding the lower one horizontally to retain both the edible part of the oyster and its juices. Then cut the abductor muscle that holds the mollusc connected to the lower valve, so that it only rests on it and is ready to serve.
Step 6. Immediately bring the seafood to the table on top of a layer of crushed ice
Step 7. Lift the shell, holding it flat to avoid spilling the liquid
Grab it so that the smooth edge is facing you.
Step 8. Tilt it up, letting the shellfish and juices enter your mouth

- You can pour a sprinkle of lemon juice or a spoonful of sauce, such as shallot vinegar, on the oyster; you can also enjoy this natural delight.
- Some people like to chew the shellfish lightly, while others prefer to swallow it whole.
- Oysters are very healthy; however, they are not a cheap food. You can try to fish them, but be aware of local regulations!
