Freshly squeezed beet juice is believed to improve blood circulation and lower blood pressure. However, since it is a rather tough vegetable, you can only get the juice from it using an extractor or an electric blender. The pure drink has a very strong flavor, so you should dilute it with other juices to make it more palatable.
Ingrediants
Simple Juice
For a portion
- 4 small beets or 2 large
- 60 ml of water (optional)
Sweet and Sour Juice

- 1 large beetroot
- 1 large apple
- 1 piece of fresh ginger 2.5 cm long
- 3 whole carrots
- 60ml unsweetened apple juice (optional)
Tropical Juice
For a portion
- 1 small beet
- Half a cucumber without seeds
- 1/4 of pineapple
- 60ml pineapple juice (optional)
Steps
Part 1 of 3: Prepare the Beets
Step 1. Trim the ends
Use a sharp, serrated knife to remove the leaves at the top of the vegetable; also remove a 6 mm thick slice at the root.
Technically, you can also extract juice from the leaves, but usually only the root is used; if you decide to use the green part as well, rinse it with running water, cut it into 5 cm pieces and squeeze it together with the rest of the vegetable
Step 2. Clean the vegetables
Rinse it with cold running water and scrub it with a vegetable brush to remove any dirt that does not come off with your fingers.
- The peel of the beet contains many nutrients; therefore, if it is relatively thin, you should clean it and not remove it, in order to extract the juice.
- If it is very hard or dirty, you should peel it off with a peeler or curved knife before proceeding.
Step 3. Cut the vegetables into four parts
Divide them in half first and then cut each portion into two more equal parts.
If the pieces are too large for the appliance, you could burn the motor. Most extractors, blenders, and food processors can handle a beet cut into four pieces, but if you have an older or underpowered model, you should chop it up further
Part 2 of 3: Getting the Juice
with an Extractor
Step 1. Prepare the extractor
Place the jug under the spout of the appliance.
If your model does not have a pitcher, you can use a large bowl or glass
Step 2. Insert the pieces of vegetables into the appliance
Place them inside the feed opening and use the extractor's plastic barrel to push them towards the blades.
- Proceed slowly and gently. Beets are very hard and the extractor motor needs time to process them. Do not force the pieces too quickly or too hard towards the blades, as this could cause the appliance to burn.
- As soon as a piece of vegetable has been "squeezed" by the tool, you can add the next one; continue like this until you have extracted the juice from all the vegetables.
Step 3. Enjoy the drink
Pour what you have collected into a glass and sip it immediately or place it in the refrigerator for half an hour before drinking it.
You can keep it in the fridge for a day or two, but it tastes best as soon as the juice is extracted
with a Blender or a Food Processor
Step 1. Mix the water with the vegetables
Put the beetroot pieces in a glass of a blender or a very powerful food processor and add the water.
Since it is a very tough vegetable, most household appliances have some difficulty chopping it when dry; adding a little water, you should encourage the movement of the blades at the beginning of the process
Step 2. Blend until smooth
Puree the beetroot by working it with water at high speed; keep going until you no longer see whole pieces of vegetables.
Even if the juice becomes relatively thin, it may still have a lumpy appearance; you have to filter it from the pulp before you can drink it
Step 3. Line the bowl with cheesecloth
Take this fabric and cut two pieces of it 60 cm long; stack them on top of each other, then fold them in half to create four layers and place them in the large bowl.
- If you don't have cheesecloth, you can use a muslin bag; wrap it around the opening of the bowl or large measuring cup.
- In practice, you can also limit yourself to a normal fine mesh strainer by placing it on the container.
Step 4. Filter the puree through the cheesecloth
Pour the contents of the blender into the fabric, bring the edges together to form a bundle and twist them together to close the opening; squeeze everything to force the liquid through the fibers and collect it in the container below.
- If you have chosen to use a muslin bag, follow the same method.
- If you have opted for a colander, use a rubber spatula to squeeze the pulp down and release as much liquid as possible.
- You should wear a pair of rubber or food grade plastic gloves for this operation, otherwise the beet pulp can stain the skin red.
Step 5. Drink the juice
Throw out the pulp and pour the liquid into a glass; sip it immediately or after chilling it in the refrigerator for half an hour.
You can technically keep the drink in the fridge for a couple of days, but it tastes better if you consume it immediately
Part 3 of 3: Variants
Sweet and Sour Juice
Step 1. Prepare the ingredients
Rinse, peel, and cut the solid ones into small pieces.
- Prepare the beetroot for juice as usual. Remove traces of soil with a brush while rinsing the vegetables under cold running water; then cut it into four parts.
- Peel the apple, core it and cut it into four pieces.
- Remove the ginger peel using the edge of a spoon; since the root is already very small, you don't have to chop it any further.
- Cut the leaves off each carrot; peel them and rinse them under cold running water before cutting them into 5 cm pieces.
Step 2. Juice all the ingredients using a juicer
Proceed as described in the previous sections but do not add the apple juice.
- First, put the apple in the appliance followed by the carrots and beetroot, then extract the ginger juice.
- Quickly mix the collected juices with a spoon to blend the flavors.
Step 3. Alternatively, extract the juice with a blender
In this case, put the solid ingredients and apple juice in the glass of the appliance, as if you were preparing pure beetroot.
- First blend the apple with its juice until you get a completely liquid mixture; then add the carrots, beetroot and ginger working all the ingredients until you get a smooth mixture.
- Filter through the four layers of cheesecloth and discard the pulp.
Step 4. Enjoy the drink
Pour the juice into the glass, drink it immediately or after chilling it for 30 minutes in the refrigerator.
Tropical Juice
Step 1. Prepare the ingredients
Clean the beetroot, peel the cucumber and pineapple; cut everything into relatively small pieces using a sharp knife.
- Clean the beetroot as you did to make the base juice. Cut off the ends and scrub the root under cold running water to remove the soil. finally, divide it into four parts.
- If the cucumber has a waxy skin, you should remove it; if it is natural, you just need to wash the vegetable with cold running water; when finished, slice it into 2-3 cm pieces.
- Remove the ends of the pineapple. Place the fruit on one of the flat surfaces you have obtained and remove the peel with a sharp knife; then chop a quarter or half of the pineapple to fill a 250ml bowl.
Step 2. Extract the juices with the appropriate appliance
If you have decided to use an extractor, just insert the pieces of fruit and vegetables through the feed opening, pressing them gently with the plastic cylinder; at this stage do not add pineapple juice.
- Work the pineapple first, followed by the cucumber slices and finally the beetroot pieces.
- Quickly mix the liquids with a spoon to even out the flavors.
Step 3. Alternatively, use a blender
If you decide to use this appliance or a food processor, pour both the solid ingredients and the pineapple juice into the glass; then filters the liquid from the beet pulp.
- Work the pineapple bites with the juice and cucumber slices until you get a liquid mixture; add the beetroot pieces and keep blending until the mixture becomes a puree.
- Filter the whole thing through the four layers of cheesecloth and discard the solid residues.
Step 4. Enjoy the juice
Pour it into a glass and drink it immediately or, if you wish, let it rest in the refrigerator for half an hour before sipping it.
