The cream for sweets can be used to create many types of desserts. For example, it's great for garnishing cakes, cupcakes and éclairs, but it's also a tasty alternative to cannoli. Preparing it at home is very simple, however you can't get a good result if you don't use the right method. Follow these steps to make no mistake!
Ingrediants
- 1 and a half cups of whole milk or cream
- 1/2 cup of sugar
- 1/4 cup of flour
- A pinch of salt
- 4 large egg yolks
- 1 teaspoon of vanilla extract
- Flavors (coffee, cinnamon or nutmeg) - optional
Steps
Method 1 of 3: Part 1: Prepare the Base
Step 1. Put the milk or cream on the stove
Pour them into a saucepan and turn on the stove over medium heat to reheat them. Don't let the liquid come to a boil. As soon as you see the steam rising from the pot, you can turn off the heat.
Step 2. Mix the eggs, sugar, flour and salt
Beat the egg yolks well in a bowl, then add the other ingredients while continuing to mix to mix them completely.
Step 3. Add warm milk to the egg mixture
Pour in the milk slowly while continuing to whisk. Finally, transfer the mixture to the pot and put it back on the stove.
- This is to reduce the heat and prevent the milk from cooking the eggs.
- If you can't pour the milk with one hand and beat the mixture with the other, you can add the milk a little at a time.
Method 2 of 3: Part 2: Cook and Cool the Cream
Step 1. Cook the custard over medium heat
It must cook slowly. In the meantime, keep stirring with the whisk to dissolve any lumps and prevent the cream from burning or sticking to the bottom.
Step 2. Constantly check the density of the cream
As it cooks, it will begin to thicken. When you have obtained the desired consistency, remove the cream from the heat and add the vanilla while continuing to mix.
- Continue to beat the cream until it forms lines on the surface dripping from the whisk.
- Here is another method to understand if the cream is ready: stop mixing for a second and see if bubbles form; if you notice large bubbles rising to the surface and bursting, you can remove the cream from the heat.
Step 3. Filter the cream
After adding the vanilla, place a colander on a large bowl to strain the cream. Use a spatula or the back of the spoon to push the cream through the colander.
Step 4. Let it cool down
Cover the bowl and put it in the fridge to cool. You can only use it if it is completely cold.
- Add your favorite flavors before it cools.
- To prevent an unsightly film from forming on the surface, place the cling film directly on the cream.
Method 3 of 3: Part 3: Using the Dessert Cream
Step 1. Make cream puffs, also called profiteroles
It is a delicious dessert that is created with a light dough baked in the oven. Each pastry must be filled with cream or, as in this case, with cream. Form a stack of cupcakes, then top them with chocolate ganache, caramel sauce, or plain icing sugar.
- Fill the cupcakes with cinnamon cream and coat them with caramel sauce to create a unique dessert.

Step 2. Prepare the éclairs
