It is a delicious potato-based stuffed bread, typical of Indian cuisine. In fact, the term "Aloo" in Urdu means potato. It is very simple to prepare and you can cook it for breakfast. Here is a recipe for four parathas.
Ingrediants
- 4 boiled potatoes, peeled and mashed.
- Salt to taste.
- Black cumin powder.
- Red chilli powder to taste.
- 1 finely chopped onion (optional).
- For the dough:
- 440 gr of maida flour or 00.
- 1 tablespoon of olive oil.
- Water q.s.
- 120 gr of butter.
Steps
Step 1. Prepare the dough with half a tablespoon of olive oil and a sufficient amount of water
It should have a slightly firmer texture than pizza.
Step 2. Let the dough rest for half an hour
Step 3. Add the spices, salt and onions to the boiled and mashed potatoes
Stir to get rid of any lumps. Make sure it doesn't turn into a watery slurry.
Step 4. Lightly flour the work surface
Prepare balls with the dough.
Step 5. Flatten each ball into a thick circle
Step 6. Now lift each piece of dough and put the potato mixture in the center
Step 7. Fold the edges inward as if it were a dumpling and make sure the filling is well sealed
Step 8. Roll up the dumpling so that it becomes a ball again
Step 9. Dust each ball and base with flour
With a rolling pin, gently crush the dough to form a kind of flatbread. In this way the filling will spread evenly.
Step 10. Proceed gently and do not flatten the dough too much to prevent the filling from coming out
Step 11. Heat a saucepan over medium heat
Grease it with butter and cook both sides of the paratha, turning it to ensure even cooking.
Step 12. Your paratha is ready to eat
Serve it with pickles, yogurt or even just a little butter. It's great for fighting the cold!
Advice
- Do not heat the pan too much, it tends to burn the paratha without cooking it completely. Maintain medium temperature and cook slowly.
- At first use more batter and less filling. As you become more and more experienced you can vary the proportions.
- Do not use potatoes that are too watery.
- To make the recipe healthier, you can add grated carrots (boil them first) or mashed peas.
