The cheese sauce is a must on the table of all those who love cheese, and it is also perfect for a Tex-Mex style dinner. You can dip in vegetables, fried chicken or classic Mexican corn chips. Preparing it is very simple and you can use the stove, microwave or slow cooker (the so-called "slow cooker").

- 450 g of cheddar type cheese
- 300 g canned diced tomatoes with the addition of canned green chillies, cut into rings

- 120 ml of milk
- 2 tablespoons of cornstarch (or cornstarch)

Method 1 of 3: Using the Microwave
Step 1. Prepare the cheese sauce using the microwave
This is a super easy way to make a large amount of salsa (around 1.25kg) for a Tex-Mex style party.
Step 2. Cut the cheese into 2-3 cm large cubes
Cut into cubes, the cheddar melts faster. If you don't cut it before heating, it may melt on the outside too quickly and burn, while in the center it will still be solid.
If you don't feel like cutting the cheese into cubes, you can either grate it or buy it already grated
Step 3. Mix the ingredients that make up the sauce
Combine the cheese with diced tomatoes, green chillies, and canned chili. Pour all the ingredients into a large glass bowl suitable for microwave use, then stir to combine. Use canned diced tomatoes and add a varying amount of canned green chillies cut into slices, depending on your personal taste.
Step 4. Heat the ingredients in the microwave for 5 minutes on maximum power
After 3 minutes put the oven on pause and stir the sauce to distribute the heat, so that the cheese melts evenly. When the cheese is completely melted, the sauce is ready to be served.
Feel free to add flavorings and spices of your choice, such as chopped onion or garlic, cumin powder, and Worcestershire sauce, to add flavor to the sauce
Step 5. Serve the sauce while it is hot
Stir it one last time after taking it out of the microwave. Make sure the cheese has melted evenly and that all the ingredients are well blended.

Method 2 of 3: Using the Stoves
Step 1. Prepare the cheese sauce using the stove
This recipe allows you to make 1.5kg of salsa, just the right amount for a Tex-Mex style party with friends.
Step 2. Blend the milk and cornstarch
Combine the two ingredients in a medium-sized saucepan. Stir with a whisk until you get a smooth, lump-free mixture.
If you prefer, you can substitute the milk for chicken broth or beer, depending on the result you want to achieve. The milk gives the sauce a creamy texture, the beer gives it a unique taste, while the chicken broth makes it tasty and velvety
Step 3. Incorporate the Mexican salsa
Use a more or less spicy ready-made sauce, according to your personal tastes. Pour it into the pot and whisk to mix the ingredients.
You can use a sauce with a smooth texture or a rustic style, depending on the result you want to achieve
Step 4. Bring the sauce to a gentle boil
Heat it over medium heat until it begins to simmer gently.
Do not cover the pot
Step 5. Add the cheese and sour cream
You can add the sour cream all at once, but the cheese should be added little by little, a handful at a time, stirring after each addition. Wait until it has melted completely before adding more to prevent burning.
- When the sauce has reached the consistency you want, stop adding the cheese.

Step 6. Heat the sauce for an additional minute
When it has reached the desired density, let it cook for a few more minutes to make sure the cheese is completely melted.

Method 3 of 3: Using the Slow Cooker
Step 1. Make the cheese sauce using the slow cooker
Once ready, you can bring it to the table directly in the pot so that it stays hot for several hours. This recipe allows you to make 1.5kg of salsa, the perfect amount for a Tex-Mex style party with friends.
Step 2. Combine the cream cheese with part of the tomatoes and chillies
Pour 300 g of canned diced tomatoes and canned green chillies cut into rings into the pot. The proportion between tomatoes and chillies can vary according to your personal tastes. Both should not be drained and must be poured directly into the pot. At this point you can add the cream cheese.
If the cheese is cold, you can cut it into cubes so that it melts evenly and does not burn
Step 3. Set the cooking mode to "High" and press the power button on the pot
It will take about 15-20 minutes for the cheese to melt completely.
- Leave the pot uncovered to know when it's time to add the rest of the ingredients.
- Stir the cheese from time to time to help it melt evenly.
Step 4. Add the cheddar cheese
Cut it into cubes before putting it in the pot. Add a handful at a time and mix thoroughly to prevent burning.

Step 7. Decorate the sauce with chopped cilantro and serve hot
Change the cooking setting to "Low" and serve the sauce. Leave the pot on to keep the sauce warm.
