Ice cream is usually made with high doses of cream and eggs. While it's delicious, it's not particularly healthy. Milk can be a healthier, but just as tasty alternative. For a slightly thicker texture, try using sweetened condensed milk. Are you looking for a vegan option? Ice cream can also be made with coconut milk.
Ingrediants
Cream Ice Cream with Normal Milk
- 500 ml of milk (whole, semi-skimmed or skimmed)
- 120 g of sugar
- 1 teaspoon of vanilla extract
Doses for 8 servings
Vanilla Ice Cream with Condensed Milk
- 400 ml of sweetened condensed milk (skim or whole)
- 500 ml of cold whipped cream
- 1 teaspoon of vanilla extract
Doses for about 1 kg of ice cream
Vegan Coconut Milk Ice Cream
- 2 (400ml) cans of whole coconut milk
- 60 g agave syrup, maple syrup, honey, raw brown sugar or brown sugar
- A pinch of salt
- 2 tablespoons of cornstarch
- 1 ½ teaspoon of vanilla extract
- Optional extra ingredients: dried fruit, chocolate chips (or carob), fruit puree, cocoa beans, etc.

Steps
Method 1 of 3: Recipe with Regular Milk
Step 1. Measure the milk, sugar and vanilla into a medium sized bowl
Stir them with a large spoon until the sugar is completely dissolved.
- You can choose any type of milk, whether it is skim, semi-skim or whole.
- You can also experiment with chocolate milk.
Step 2. Pour the ingredients into an ice cream maker
Turn it on and let it work for about 20 minutes, until you get a thick mixture. Pour it into an airtight container and place it in the freezer.
Step 3. The ice cream maker is very useful, but not essential
If you don't have one, pour the ingredients into a shallow freezer-safe dish. Place it in the freezer.
Step 4. To optimize the consistency of the ice cream, stir it every 2-4 hours, returning it to the freezer each time
- If you used an ice cream maker, stir it every 4 hours;
- If you haven't used the ice cream maker, stir it every 2-4 hours once the first ice crystals have formed.
Step 5. Keep the ice cream in the freezer for 8 hours (stirring regularly) or overnight
By then it should have thickened properly. You can serve it immediately.
Step 6. Serve it in a small bowl with the help of a portioner
Garnish it as you wish using chocolate syrup, whipped cream, dried fruit, dried or canned fruit, and any other ingredients you like.
Place leftovers in the freezer. It is possible to keep them for several days
Method 2 of 3: Condensed Milk Recipe
Step 1. Put the sweetened condensed milk in the refrigerator
Usually this product is sold at room temperature. For the recipe to be successful, the milk must be very cold so that it can mix well with the other ingredients. Keep it in the fridge for a few hours before starting.
Step 2. Remove the whipped cream from the refrigerator and whisk it immediately with a planetary mixer, as you have to make sure that the ingredients are very cold at the time of preparation
Secure the beater release and run it at medium speed. It should whip the cream until stiff.
The planetary mixer can be easily replaced with a manual mixer
Step 3. Once the cream has been whipped, remove the condensed milk from the refrigerator
Reduce the whisk speed to a minimum and slowly pour it over the cream. Add the vanilla extract.
Step 4. After adding the other ingredients, adjust the speed to be medium
Continue to beat them until they have thickened: you should whip them until stiff. In this case you will get a much denser final compound.
Step 5. Personalize the ice cream by adding your favorite ingredients (optional)
The choice is up to you: experiment and dare. Try using cookies, fruit puree, dried fruit, cake bits, chocolate syrup, and more to create a personalized flavor. Mix well to fully incorporate the other ingredients.
- For example, to make strawberry cheesecake ice cream, add one serving of cheesecake and the desired amount of strawberry puree.
- To make a biscuit ice cream, add 75 g of crumbled Oreos;
- To make mango ice cream, add 40g of fruit.
Step 6. Move the ice cream into a large airtight container suitable for the freezer with the help of a spoon
Keep it in the freezer for at least 6 hours or overnight. At that point it will be ready to be served.
Method 3 of 3: Vegan Ice Cream Recipe with Coconut Milk
Step 1. Shake the cans of coconut milk vigorously before opening them
Measure 60ml and set aside for now. Pour the remaining milk into a saucepan.
Since coconut milk separates inside the can, shaking it vigorously before use allows it to re-incorporate liquid and solid elements
Step 2. Measure your favorite sweetener (such as agave, maple syrup, honey, or sugar) and salt
Add them to the saucepan.
Step 3. Let the coconut milk heat on medium-low heat for 1-2 minutes, stirring regularly
It should warm up evenly. Also, the sweetener should dissolve.
Step 4. Pour the cornstarch and the remaining 60ml of coconut milk into a small bowl
Whisk them vigorously until the cornstarch dissolves completely.
Step 5. Pour the cornstarch solution over the warm coconut milk
Beat them gently to get a homogeneous mixture.
Step 6. Raise the heat to medium heat and cook the mixture for 6-8 minutes
It should thicken enough to cover the back of a spoon. Keep an eye on it - don't let it come to a boil.
Step 7. Once the mixture has thickened, turn off the heat and remove the saucepan from the stove
Add the vanilla and mix to incorporate. Let it cool for a few minutes.
Step 8. Pour the mixture into a shallow container and cover it with cling film
Put it in the fridge for between 4 hours and 3 days.
Step 9. Let the mixture set for 10-20 minutes
Take it out of the fridge and remove the cling film. By now it should have reached a consistency similar to that of a pudding. Pour it into an ice cream maker and turn it on. It should thicken until it has a consistency similar to that of an ice cream on tap.
- Each ice cream maker works differently, but it generally takes about 10-20 minutes.
- At the end of the preparation, add the other ingredients you want and operate the ice cream maker for a few more seconds.
Step 10. Move the ice cream to an airtight container suitable for the freezer
Collect all the mixture from the bowl with the help of a spoon. Cover it with wax or parchment paper, which will protect it from the formation of ice crystals. Put it in the freezer for 4 hours, until it solidifies. Then, serve it.
