Lechon Kawali is a traditional Filipino dish based on boiled and fried pork. It is usually accompanied with a delicious sauce called 'sarsa ni mang tomas'. Read on to have all the useful details for the preparation of this tasty recipe.
Ingrediants

- 480 ml of water
- Fry oil
- 1 or 2 pounds of pork, preferably bacon
- Bay leaves
Steps
Step 1. Prepare the pork, preferably bacon
Step 2. Choose a large pot in which to boil the meat
Pour the water into the pot and add a pinch of salt, pepper and bay leaves.
Step 3. Cook the pork in boiling water for 45 minutes
Ideally, when cooked, the meat should be soft to the touch of the fork without falling apart.
Step 4. Remove the cooked meat from the pot and let it air dry for about an hour
Step 5. Prepare a large pan for frying
Heat the oil without bringing it to the point of smoke.
Step 6. Gently place the dry meat in the hot oil, and fry it until golden on the outside
To get a crispy crust, sprinkle it with cold water every 10 minutes. IMPORTANT, PAY VERY ATTENTION TO POSSIBLE SPLASHES OF BOILING OIL!
Step 7. When the meat has taken on a crispy external crust, remove it from the hot oil and transfer it to a plate lined with absorbent paper
Step 8. After about 15 minutes, slice the meat and serve it
Step 9. Decorate the dish with onion and tomato slices and, if desired, add a few leaves of fresh parsley
Step 10. You can accompany the meat with a seasoning made from vinegar, garlic and salt, with a sweet and sour sauce, a barbecue sauce or other flavors of your choice
Advice
- Be creative when seasoning the boiling water, you can add garlic, vinegar, rosemary or soy sauce, for example.
- Make sure the meat is soft but not falling apart.
- When frying meat in hot oil, use kitchen tongs. Flip the bacon halfway through cooking to brown it evenly.
- You can replace the pot with a steamer.

- Be very careful, the water and oil will be hot.
- Always be very careful when frying, and protect your hands, arms and face when adding tiny drops of cold water to the pan.
