- 350 g of breadcrumbs
- 2 large eggs, beaten
- 10 g of a mixture of aromatic herbs and spices for fish

- A handful of chopped chives
- 30-45 g of finely chopped fresh dill
- 5 ml of cayenne pepper sauce
- Zest of 1 lemon
- Vegetable oil, such as canola, for frying

Part 1 of 3: Prepare and Shape the Salmon Patties

Step 1. Take 3 x 170g cans of salmon and drain well
Place the fish in a large bowl and gently cut it into smaller pieces with the help of a fork.
- Red or pink salmon is best for making patties.
- Make sure the canned salmon is skinless and boneless.

Step 2. Once the salmon has been prepared, pour 350g of breadcrumbs into the bowl and mix the ingredients well

- In addition to the classic breadcrumbs, you can also use flavored bread, panko or crushed savory crackers.

Step 3. Mix the salmon and breadcrumbs well, add 2 large beaten eggs, 10 g of a mixture of aromatic herbs and spices for fish, ½ finely chopped red pepper, a handful of chopped chives, 30-45 g of fresh dill chopped, 5 ml of cayenne pepper sauce and the zest of 1 lemon
Mix it well.
- If the mixture feels a little dense as you mix the ingredients, you can add a handful of extra breadcrumbs.
- You can also add other vegetables and seasonings, such as chopped onion, chopped green pepper, chopped garlic, and chopped fresh parsley. Choose according to your preferences.

Step 4. Mix the ingredients, shape them with clean hands until you obtain medallions with a diameter of about 8 cm and a thickness of about 3 cm
You should be able to get 8-10.
If possible, put them in the fridge for about half an hour before cooking, so that they thicken

- If the pan is not large enough and you have prepared a lot of patties, you will need to divide them into several groups to fry them.
- When it's time to cook them on the other side, turn them gently with a large or fish-specific spatula.

Step 3. Once the patties are cooked, remove them from the pan with a spatula and place them on a plate or tray lined with kitchen paper to absorb the excess oil
