Most consumers believe that bananas are only good when they are yellow and ripe. While it is true that by eating an unripe banana your stomach will want you to be able to show more common sense next time, there are many recipes that allow you to cook green bananas and create delicious dishes. This recipe from the Northern Caribbean shows how to cook and eat bananas with 'Aji-Li-Mojili' sauce. In that area of the world, bananas, as well as their larger cousins, plane trees, grow in abundance.
Ingrediants
- 8-12 Unripe green bananas
- Waterfall
- 2 tablespoons of salt for the water, 1 tablespoon for the sauce
- 2 cloves of garlic
- 3 small Sweet Chillies
- 2 peppercorns or 1/4 teaspoon ground pepper
- 60 ml of Extra Virgin Olive Oil
- 2 tablespoons of Lime Juice
- 2 tablespoons of vinegar

Step 1. Cut the ends of the bananas

Step 2. Make two vertical incisions on the bananas, on opposite sides
The cuts should be as deep as the peel. Do not remove the peel.

Step 3. Dip bananas in boiling water, cover and cook for 15 minutes

Step 4. Drain the bananas from the water and peel them

Step 5. In the same pot, pour 2 liters of water and 2 tablespoons of salt
Bring the water to a boil.

Step 6. Dip bananas into boiling water and cover the pot

Step 7. Cook them on a light boil for 10 minutes

Step 8. Add 240ml of cold water and continue cooking for another 5 minutes

Step 9. Drain the bananas and let them cool

Step 10. Cut them into slices about 2.5 cm and arrange them in a glass or porcelain bowl

Step 11. In a mortar, grind the garlic, sweet peppers, and peppercorns
If you don't have a mortar and pestle, use a blender or food processor.

Step 12. Incorporate the extra virgin olive oil, lime juice, vinegar and 1 tablespoon of salt
Mix it carefully.

Step 13. Season the banana slices with the sauce evenly distributing it
