Before using saffron, you must prepare this spice so that it releases its color and flavor to the maximum. This article tells you how.
Note: this article is about saffron in threads (or pistils); the powder is already prepared and ready for use.
Steps
Step 1. Buy saffron
Step 2. Choose the amount of saffron to crush
A pinch will give about 12-20 strands which should be enough for 4-6 servings.
The more saffron you use, the darker the color will be. Be careful, however, because too much saffron can give too strong a flavor
Step 3. Put the saffron strands in a mortar and pound them
Crush them all.
Step 4. Soak the crushed saffron in hot water for as long as possible before use
The water will probably cool down in 20 minutes, when you can use "saffron tea".
Step 5. Use the saffron as directed in the recipe
Always read the recipe to know the suggested preparation method instead of speculating how to proceed. There may be particular variations that help improve the dish.
Advice
- Liquid saffron can be made like this: put a pinch of saffron in a small bowl. Pour in 4-6 tablespoons of hot water. Let it sit for 2 hours and then use it.
- Turmeric can replace saffron's color, but not the flavor.
- Traditional recipes often recommend toasting saffron before use.
- Two wires for four people will be enough.
