If you have plenty of apples available and don't know what to do with them, you can make apple juice. Cut the ripe apples into small pieces and boil them until soft. Strain the mixture through a colander and keep the juice. If the quantity of apples is small, blend the raw fruits with a little water and filter the puree obtained: you will get fresh apple juice.

Freshly Blended Apple Juice

- Sugar or honey for sweetening (optional)
Doses for 350 ml of juice
Steps
Method 1 of 2: Prepare Apple Juice by Cooking
Step 1. Wash 18 apples
Since you don't peel, choose organic or at least pesticide-free apples. Choose the variety you prefer, or mix these varieties:
- Gala
- Red delicious
- Fuji
- Honeycrisp
- Pink lady
Step 2. Cut the apples into slices
Cut each apple into about 8 slices, resting on a cutting board. If you prefer you can use an apple slicer, which removes the core at the same time.
However, it is not necessary to remove the core, seeds and peel, as you will eventually filter everything out
Step 3. Put the apples in the pot and cover them with 5 cm of water
Place the apples, cored and all, in a large pot. Pour in enough water to cover them for 5cm.
If there is too much water, the juice is likely to be too diluted
Step 4. Cover and simmer for 20-25 minutes
To bring the water to a boil, set the heat to medium-high. When it boils, turn it down to medium heat and put the lid on. Let the apples simmer until soft.
Occasionally lift the lid and stir to make sure the apples cook evenly
Step 5. Place a fine mesh strainer on a mixing bowl or jug
If you want to filter the juice further, place a coffee filter or gauze in the colander. The container should be large enough to hold all the apple juice.
Step 6. Filter the juice with the colander
Turn off the heat and pour the mixture into the colander with a spoon or ladle. Gently pour the cooked apples into the colander using a spoon to recover all the pulp.
Step 7. Let it cool and taste the juice
Let it cool in the container at room temperature, then taste it. If it doesn't seem sweet enough, add a little sugar or honey. If it tastes too strong, add a little water to dilute it until you like it.
Step 8. Store in the fridge for up to a week
Pour the juice into an airtight container to keep in the fridge. To extend the storage time up to a maximum of 6 months, you can possibly freeze it.
You can also can it and store it in the pantry for 6-9 months
Method 2 of 2: Make Fresh Apple Juice with the Blender
Step 1. Wash and quarter 4 apples
Place the clean apples on a cutting board and remove the cores and seeds. You can keep the peel. Then cut each apple into 4 equal pieces.
Use your favorite varieties, or try a mix of Gala, Fuji, Ambrosia, Honeycrisp and Pink lady apples
Step 2. Put them in a blender along with 60ml of cold water
If you don't have a high-speed blender, you can use a food processor. Put the lid on the blender or food processor.
Step 3. Start blending at low speed, then gradually increase
Give the blender enough time to lock the apple pieces in the blades, then begin to gradually increase the speed.
Step 4. Blend the apples on high speed for 45 seconds
If your blender comes with a pestle, use it to press the apple pieces and push them down towards the blades. If you don't have the pestle, turn off the blender a couple of times and push the pieces down with a long spoon.
Apples must be uniformly reduced to puree
Step 5. Filter the apple juice with a fine mesh strainer
Place a fine mesh strainer on a bowl or jug and pour the apple puree into it. Drain the juice through the colander for about 10 minutes.
- It may be necessary to give a stir to drain all the juice;
- If you want to filter it further, place a piece of cheesecloth on the colander before pouring the apple puree into it. Finally, squeeze the gauze to release all the juice.
Step 6. Serve the apple juice immediately
Pour it into a glass and taste it. If it's not sweet enough, add a little honey or sugar. Enjoy it now, or cover it and put it in the fridge, where it will keep for a week at most.
