Steps
Method 1 of 2: Making Pancakes
Step 1. Preheat the griddle over medium-low heat and grease it with butter
If you have a hot plate, preheat it to 180 ° C
Step 2. Mix the wet ingredients in a medium sized bowl
Beat the hot chocolate, vanilla and egg until smooth.
Step 3. Mix the dry ingredients
In a separate bowl, sift or whisk the cocoa powder, flour, salt, and baking powder until smooth.
Step 4. Mix all the ingredients
Make a hole in the center of the dry ingredients, then pour the moist ones into it. Mix them with the help of a whisk or a rubber spatula.
Do not mix them too much, otherwise gluten can form in the flour, with the risk of ending up with chewy and non-spongy pancakes
Step 5. Let the batter sit for 30 minutes to allow the flour to absorb the moisture well
In addition, the gluten will have time to relax, allowing for light and fluffy pancakes.
If you are in a hurry, you can skip this step, but the pancakes will be less spongy
Step 6. Pour 60ml of batter onto the griddle
This quantity makes it possible to obtain 1 pancake. The amount of pancakes you can cook at the same time depends on the size of the plate. Leave enough space between them to be able to turn them smoothly.
Step 7. Bake the pancakes
When bubbles start to form on the surface (after 2-3 minutes), turn them over with a spatula.
Once turned, cook for another 2 minutes or until golden on both sides
Step 8. Place them on a large plate or cooling rack (place it on a baking sheet in the oven)
There is no need to use the oven, but it helps to keep them warm while you bake the other pancakes if you need to make a large amount. Preheat it to 100 ° C, then lay the pancakes on a cooling plate or rack (put it on a baking sheet)
Step 9. Repeat until the batter is finished
Put the first pancakes in the oven, grease the hot plate again with a spoon (15 g) of butter. Pour in some batter and continue the process until the preparation is complete.
Step 10. Plate the pancakes, garnish them as you wish and serve them
Enjoy your meal!
Method 2 of 2: Experiment with Seals
Step 1. Unleash your imagination
Hot chocolate pancakes can be garnished with numerous ingredients. The beauty is that you can transform them every time you prepare them to always try something new for breakfast.
Step 2. Sprinkle them with ganache sauce
In a skillet or double boiler, mix the chocolate chips and half cream using a whisk. Cook them over low heat. Turn off the heat and let the sauce cool - it should be lukewarm. Pour it over each pancake or a stack of pancakes.
Step 3. Try a hot chocolate sauce
In a skillet, mix maple syrup and hot chocolate powder. Let them simmer over medium heat, whisking them constantly. Cook them for 5 minutes - the sauce should be hot and thick. Sprinkle it on each pancake or on a stack of pancakes.
Step 4. Top them with marshmallows
Hot chocolate goes perfectly with marshmallows, so why not use them to garnish pancakes? Before serving, you can also roast them or lightly melt them with a torch.
Alternatively, try spreading marshmallow cream on the pancakes
Step 5. Make hot chocolate and peppermint pancakes, flavors that go perfectly with Christmas time
The preparation is simple: add a few drops of peppermint extract to the ganache sauce or hot chocolate sauce.
Top each pancake with a drizzle of chocolate and peppermint sauce, then sprinkle with chopped peppermint sticks
Step 6. Experiment with other types of gaskets
If you make hot chocolate pancakes for a dessert or buffet, you will have no limits. Get inspired by thinking about all the toppings you would use for a sundae ice cream.
- You can garnish them with chocolate syrup instead of ganache sauce.
- Pancakes also go perfectly with a chocolate and hazelnut cream.
- Add some whipped cream and chocolate flakes.
- Make a caramel sauce (also salty) and pour it over the pancakes.
- Try using marshmallows and mini chocolate chips to create a kind of s'more.
- Garnish them with chocolate flakes or curls to make them even sweeter.
Warnings
- Try not to mix the ingredients more than necessary, otherwise the pancakes will be dry and chewy.
- Avoid hot chocolate mixes containing dairy products, as they can alter the texture of pancakes.
- Do not stack the pancakes, or they will become mushy.
