Have you ever woken up with a craving for steak? In the United States it is quite common to make a thin steak for breakfast usually paired with potatoes and eggs. Although it can be seasoned and flavored in a number of different ways, tradition relies on paprika, soy sauce and plenty of garlic powder. Ingrediants

  • 450g beef loin steak
  • 10 ml of olive oil divided into two doses
  • 10 ml of soy sauce
  • 10 ml of red wine vinegar
  • Salt and pepper to taste
  • A pinch of smoked paprika
  • A baked potato
  • One red onion
  • 5 g of garlic powder divided into two doses
  • A pinch of pepper flavored with lemon zest
  • Fresh or dried parsley to taste
  • An egg
  • 30 g of coconut oil

Steps

Part 1 of 3: Flavoring the Steak

Step 1. Grease the steak with oil and make it tender

Place it on a large plate and use kitchen paper to dab it on both sides. Beat it with a meat mallet to make it thinner and more tender; alternatively, you can use a sharp knife to prick the surface and prevent muscle fibers from hardening. Sprinkle it evenly with 5ml of olive oil.

If you wish, you can let it come to room temperature before cooking, but remember that this does not improve its flavor or browning

Step 2. Spice it up

Moisten it with 10 ml of soy sauce and the same amount of red vinegar; add salt and freshly ground pepper according to your tastes, a pinch of garlic pepper and the same amount of smoked paprika.

If you like the intense and rich smoky flavor, you can add some liquid smoke

Step 3. Turn the meat over and flavor the other side as well

Make sure that the whole steak is seasoned evenly; add another 5 ml of olive oil, salt and garlic powder.

For this you can use your hands or a meat tongs

Part 2 of 3: Prepare the Egg and Potatoes

Step 1. Cut the potato

Take one cooked in the oven and now cold. Divide it into two parts with the help of a sharp knife and slice one half into 1 cm thick pieces; if you like the texture of the peel, you can avoid peeling it off. Continue cutting the tuber until you get 2 to 3 cm cubes.

Save the other half for a different recipe or use it to double the ration of fries to go with this dish

Step 2. Season the potato cubes

Sprinkle them with a little garlic powder, lemon pepper and chopped fresh parsley; mix everything to make the ingredients uniform.

You can also use dried thyme, rosemary, or Provencal herbs

Cut it in half and reduce a part of it into thin strips; you can decide to leave it like this or to continue chopping it.

Step 4. Heat the grill and pan

Light a gas barbecue or prepare a charcoal one until you get hot embers. Place a 30 cm wide cast iron skillet on the grill and add 30 g of coconut oil; let the pan and the oil heat up for a few minutes.

If you don't want to use coconut oil, you can choose canola oil, but avoid olive oil as it has a low smoke point and could burn

Step 5. Cook the potatoes and onions

Add the flavored tuber and chopped onion to the now hot cast iron skillet and quickly mix the ingredients to coat them with oil. Cook for 8-10 minutes or until the vegetables are browned to the right point; when finished, remove them from the pan.

If you like crispy potatoes, do not mix them often, otherwise you will prevent a crust from forming; if they stick to the pan, add another 5-10 g of coconut oil

Step 6. Fry the egg

Pour 5 g of coconut oil into the cast iron skillet you used earlier. It should already be hot and placed on the barbecue. Break the egg and pour it into the pan to fry it according to your taste; usually, it is cooked on both sides, leaving the yolk rather liquid.

Part 3 of 3: Cook the Steak in the Cast Iron Skillet

Step 1. Heat the barbecue

If you are using a gas model, turn it on to the maximum temperature. You can also opt for an already very hot charcoal grill; in this case, accumulate the embers in the center to conserve heat.

To understand if the charcoal barbecue is hot enough, keep your hand about 7-8 cm from the embers; if you can hold on without discomfort for just a second, the temperature is just right

Step 2. Cook the steak

Place it directly on the grill and cook for 4-5 minutes. Put on oven gloves and turn it around using kitchen tongs; wait for the second side to reach the doneness of your choice. Here are some guidelines:

  • For a rare steak, wait 3-5 minutes;
  • For medium cooking it takes 5-7 minutes;
  • The meat is well done after 8-10 minutes.

Step 3. Let it rest

Once cooked according to your preferences, remove it from the barbecue using the tongs and place it on a plate or cutting board; cover it with a sheet of aluminum foil without sealing it and let it rest for 5 minutes.

This phase allows the juices of the meat to be distributed again among the muscle fibers and to complete the cooking

Step 4. Serve the steak

Slice it carefully using a sharp knife. Cut it into thin strips perpendicular to the fibers, so that it is more tender to chew. Accompany it with potatoes and egg. To flavor it you can consider serving it with:

  • Barbecue sauce;
