These sweet rolls are suitable for many uses and are super easy to make. Combine the basic ingredients to make the bread, such as yeast, flour and water, then knead the dough until you get a smooth consistency. Then form into balls of uniform size and let them rise before baking them in the oven. After 12-15 minutes of cooking, the sweet rolls will be ready to be baked and served.
Ingrediants
- 1, 2 kg g of flour 00
- 7 g of dry yeast
- 240 ml of milk
- 180 ml of water
- 120 ml of extra virgin olive or sunflower oil
- 60 g of sugar
- 1 teaspoon (5 g) of salt
For 12 sandwiches
Steps
Part 1 of 3: Mix the Ingredients
Step 1. Combine flour and baking powder in a mixing bowl
Weigh 500 g of flour, pour it into a large bowl and add 7 g of dry yeast. Mix the two ingredients by mixing them thoroughly with a spoon.
Note that you only need to use 500g of flour at this stage. The other 700 g will be added later gradually
Step 2. Heat the milk, water, oil, sugar and salt in another bowl
Use a medium sized bowl suitable for microwave use. Pour in 240 ml of milk, 180 ml of water, 120 ml of extra virgin olive or sunflower oil, 60 g of sugar and a teaspoon (5 g) of salt. Place the bowl in the microwave and heat the ingredients on high to warm them.
If you don't know how long it takes for the ingredients to heat up, start with 15-20 second intervals
Step 3. Combine the two blends
When the ingredients have cooled, remove the container from the microwave and transfer them to the bowl with the flour and baking powder.
Step 4. Stir for 3 minutes until smooth
Mix the ingredients by mixing them with a large spoon. Make sure they are well distributed and that there are no lumps. Keep stirring until you get a mixture with a smooth consistency.
- If you decide to mix the ingredients with the food processor instead of doing it by hand, it will most likely take less than 3 minutes. Keep an eye on the consistency of the mixture to know when to turn off the robot.
- If you have chosen the latter solution, mount the accessory you need to knead and set the robot to a low speed.
Step 5. Add another 450-700g of flour
Add it a little at a time until you get a soft dough. Start with 250g of flour; pour it into the container and start mixing again with the spoon or with the mixer, then add another 200 g of flour a little at a time. You need to get a soft dough. Make sure you distribute the flour well and add the remaining flour as well only if the dough is very sticky.
Be careful not to add more than 700g of flour, otherwise the rolls will be hard and compact instead of soft and light
Part 2 of 3: Shape the Sandwiches and Bake Them in the Oven
Step 1. Place the dough on a lightly floured flat surface and let it rest for 10 minutes
Take some flour and spread it over a part of the clean shelf. Remove the dough from the bowl, lay it on the floured surface and then cover it with a large upside down container. Let the covered dough rest for about ten minutes.
Step 2. Form 12 sandwiches
Divide the dough into 12 equal portions and shape them in your hands to create a ball. The dough may be slightly sticky, so it's best to lightly flour your hands. When the balls are ready, squeeze them a little to flatten them.
Wash your hands thoroughly with soap and water before forming sandwiches
Step 3. Transfer the sandwiches to a greased baking sheet
You can decide to butter it or use parchment paper. Place each ball on the baking sheet so that each has about 5 cm of space around it.
Leaving the dough will expand, which is why it is important to leave some space between one sandwich and the next
Step 4. Wait 1-2 hours for the rolls to rise and double in volume
Pay attention to the size of the balls to recognize when the volume is duplicated. Avoid touching or moving the buns while they are rising.
Let the dough rise at room temperature
Step 5. Bake the rolls in the oven at 200 ° C for 12-15 minutes
Turn on the oven and let it heat up before putting the sandwiches in the oven. When it has reached the set temperature and the buns have risen completely, place them in the oven and bake them for 12-15 minutes or until they acquire a golden tinge.
- When the sandwiches are cooked, let them cool on the baking sheet for a few minutes before cutting them in half and serving.
- If you want to preserve the sandwiches, put them in a food bag and let out as much air as possible before sealing it.
- Sandwiches should last around 5-7 days if you store them at room temperature. If you prefer, you can put them in the freezer to keep them for several months. In this case, make sure the bag is suitable for freezing food.
Part 3 of 3: Additions and Variations
Step 1. Brush the sandwiches with butter and honey after they are cooked
Combine some softened butter with a few teaspoons of honey, adding a little of each ingredient according to your preferences. Mix well and then use a silicone spatula to brush the resulting mixture onto the freshly baked rolls.
The sandwiches will taste even sweeter and more delicious
Step 2. Use flour with a low strength indicator (W) instead of 00 flour to make buns with a more elastic texture
Instead of using 00 flour, buy a flour with a low strength indicator (W) and use it as described in the recipe. You will get a less sticky dough, easier to shape and, once cooked, the sandwiches will have a more elastic texture while remaining soft.
Aside from the flour, the rest of the recipe will remain unchanged
Step 3. Add 1 or 2 eggs to give the dough a richer flavor
Adding the eggs will make it stickier, so chances are you'll need a little more flour. The buns will taste delicious and even richer, however they may turn out a little lower than normal.
Start by incorporating about 100g of extra flour
Step 4. Use a combination of whole wheat and white flour for a healthier alternative
If you are not used to the taste of wholemeal flour, do not substitute it entirely for 00 flour. Try using 50% wholemeal flour and 50% white flour and follow the recipe normally for healthier sandwiches, but not less tasty.
