Many do not know that making pizza at home without an oven is very easy. To get started, buy ready-made dough or make it from scratch. Let it cook in the pan: once golden on the bottom, flip it to season it with tomato sauce, cheese and any other garnish you want. Wait for the cheese to melt, then remove the pizza from the pan and cut it. Enjoy your meal!
Ingrediants
- 250 g of flour 0
- 1 teaspoon of active dry yeast
- 180 ml of warm water
- 1 and a half teaspoons of salt
- 120-240 ml of tomato sauce
- 1-2 cups (100-200 g) of cheese cut into strips
- 1-2 cups (100-200 g) pre-cut toppings of your choice (optional)
Steps
Part 1 of 3: Prepare the Dough and Topping
Step 1. Dissolve the yeast
Pour the lukewarm water into a medium-sized bowl or into the bowl of a planetary mixer. Add the yeast, dissolve it in the water and let it rest for about 10 minutes.
- The mixture should start to bubble.
- If you don't want to make pizza dough, buy ready-made pizza dough at the supermarket.
Step 2. Add flour and salt
In the bowl, add 2 cups (250 g) of 0 flour and 1 1/2 teaspoons of salt. Mix the ingredients vigorously with a spatula or spoon until you get a lumpy dough: since you will have to work it, it does not need to be completely smooth and homogeneous.
Step 3. Work the dough with your hands on a work surface or table, otherwise use a planetary mixer setting it to the minimum
To knead by hand, place the dough on the table, then start kneading it. Fold it back on itself and roll it out again, again and again. Work it for 5 or 8 minutes: you should get a smooth and homogeneous paste. Also, try sticking a finger into the dough - it should return to its place.
If it's particularly sticky, add a pinch of flour and knead again. Avoid using too much, or it will take on a thick, heavy consistency
Step 4. Let the dough rise for at least 1 hour
Once you have a smooth and homogeneous sphere, pour some cooking oil on a paper towel and use it to lightly grease the inside of a large bowl. Put the dough inside, cover it with a cloth and let it rise for an hour and a half or until its size has doubled.
- If you are in a hurry, you can skip the leavening phase and start preparing the pizza right away. But remember that the ledge will be particularly thin and crunchy rather than soft.
- If you make the dough the day before, let it rise for 30 minutes, then leave it in the bowl by covering it with plastic for food and keep it in the fridge until it's time to use it.
Step 5. As the dough rises, start preparing the pizza toppings
Cut your favorite ingredients, such as mushrooms, peppers, sausage or ham. You should calculate about 100 or 200g of toppings. Set the ingredients aside.
Step 6. Remove the dough from the bowl and divide it into 2 equal sized balls
Pour some flour onto a clean table or cutting board, then sprinkle it with your hands to create a thin, even layer. Place a ball of dough on the work surface and roll it out with a rolling pin until you get a circle with a slightly smaller diameter than the pan you will use for cooking. Repeat with the other sphere.
Once the dough has been rolled out, work it with your hands to obtain a circular shape, if necessary
Part 2 of 3: Cooking the Pizza in a Pan
Step 1. Take a large skillet and let it heat over medium-high heat
Pour in a teaspoon (about 5ml) of cooking oil and rotate it to coat the bottom. If you want to prepare both pizzas at the same time, you can also use 2 pans of the same size.
You can use any type of pan, the important thing is that it is large enough to hold the whole pizza dough disc
Step 2. Cook the dough on one side
Once the pan has been heated, carefully place the disc of dough and let it cook for about a minute: bubbles should form on the surface of the dough, and it should also brown slightly on the edges.
If the bubbles are too large, you should deflate them by tapping them with a spatula. You can also leave them: when cooked they will become crunchy
Step 3. After one minute, turn the dough using a spatula
Sprinkle half of the sauce on the pizza, leaving about 5 cm free on the outer perimeter for the cornice to form. Add half of the cheese and half of the other toppings.
Step 4. Garnish the pizza, put the lid on the pan and turn the heat down to medium heat
Covering the pan allows the heat to be trapped, so the cheese can melt and the toppings can cook.
Step 5. Cook the pizza for 4 or 5 minutes, leaving the pan covered
At this point, remove the lid. If the cheese has melted and the bottom of the dough is golden brown, the pizza should be ready. If not, put the lid back on the pan and check the pizza every minute or so.
Step 6. Once the pizza has been prepared, remove it from the pan with a spatula and place it on a cutting board to allow it to cool
Meanwhile, cook the other disc of pasta. Once both pizzas are cooked and cooled, cut them and serve them.
Part 3 of 3: Grilling the Pizza
Step 1. Heat the grill to about 300 ° C
Next to it, prepare a table so that you can place the toppings, the dough, tongs, a pastry brush, a spatula, a large spoon and an oven mitt on it.
- If possible, adjust the grill so that it gives off direct rather than indirect heat.
- The grill allows you to make the pizza more crunchy, with a toasted edge very similar to that of wood-fired pizza.
Step 2. Take the pastry brush and brush with olive oil on one side of a pizza (or both, if the grid is large enough for you to prepare them at the same time)
Step 3. Place the dough on the wire rack with the greasy side facing down
If possible, try to cook both pizzas at the same time. Grease the top side as well.
Step 4. Cook the dough for 3 minutes without covering the grill
At this point it should appear firmer and less fluffy than before, but not crunchy enough.
Step 5. Turn the dough after 3 minutes using tongs or spatula, then sprinkle it immediately with the sauce using a spoon
Add the cheese and toppings. Remember: if you make one pizza at a time, use only half of the ingredients.
Step 6. Put the lid on the grill and let the pizza cook for another 3 to 5 minutes
Check it to see if it's ready. If the edges have become crispy and the cheese has melted, remove it from the grill. If not, replace the lid and check it every 30 seconds or so until cooked.
Step 7. Remove the pizza from the grill using tongs or spatula and move it to a cutting board
If you prepare one at a time, cook the other disc of pasta and repeat the same steps: cooking, seasoning and removing from the grill.
Step 8. Before serving the pizzas, wait a few minutes so that they are no longer hot
Cut them with a large knife or pizza wheel and serve them while still hot.
Advice
- If possible, use 2 pans of similar size to make both pizzas at the same time.
- Make sure you prepare the ingredients to be cooked in advance. If you use vegetables that require long cooking times, such as broccoli, it is good to cook them partially before garnishing the pizza, so that they do not remain raw.
