Method 5 of 6: Grill the Zucchini
Step 1. Remove the ends of the courgettes with the knife and slice them lengthwise or into slices
Hold them steady with your non-dominant hand while cutting them with a sharp vegetable knife. If you want to cut them lengthwise, slice them from one end to the other. If, on the other hand, you prefer to cut them into slices, hold the knife perpendicular to the courgettes, then cut them into round slices of uniform thickness.
