Zucchini is an excellent summer vegetable, which can be prepared in many different ways thanks to its versatility. For example, you can add zucchini to your salads or to a delicate bread. Read on and you'll discover new ways to prepare this fabulous vegetable.

- 2 Zucchini
- 1 egg white
- 60 ml of milk
- 50 g of Parmesan flakes
- 50 g of Breadcrumbs

Zucchini bread
- 300 g of flour
- 5 g of salt
- 5 g of Bicarbonate
- 5 g of baking powder
- 15 g of Cinnamon powder
- 3 eggs
- 240 ml of extra virgin olive oil
- 280 g of sugar
- 15 g of Vanilla Extract
- 480 g of grated courgettes
- 125 g of chopped walnuts

Steps
Method 1 of 3: Sautéed Zucchini
Step 1. Finely chop the garlic
Use a cutting board and a knife.
Step 2. Take a cast iron or deep-bottomed skillet, and heat the extra virgin olive oil over medium-high heat
Add the minced garlic and pink pepper, cook for 30 seconds, stirring, to prevent the garlic from burning. If you wish, you can remove the garlic at this point, otherwise proceed with the preparation.
Step 3. Pour the sliced courgettes into the pan
Mix carefully using a wooden spoon and make sure all the courgette slices are flavored with the oil.
Step 4. Continue cooking until each side of the courgette sticks is golden brown, then toss them in the pot for an additional minute
Turn off the heat and season the vegetables with salt and pepper, according to your taste.
Step 5. Transfer the courgettes to a serving dish and serve immediately
If you wish, you can dress them with Parmesan.
Method 2 of 3: Healthy Fried Zucchini
Step 1. Preheat the oven to 220 ° C
Step 2. Cut the courgettes into sticks
Try to get pieces of zucchini 4-6 cm long and 1 cm thick, just like French fries.
Step 3. In a small bowl, beat the milk and egg white
In a second bowl, mix the breadcrumbs and Parmesan.
Step 4. Grease a baking sheet with extra virgin olive oil

When finished, arrange the zucchini in the baking sheet in an orderly manner.
Step 6. Bake them for 25-30 minutes

Method 3 of 3: Zucchini Bread
Step 1. Preheat the oven to 160 ° C
Grease and flour two loaf bread tins (13x24 cm).
Step 2. Grate the zucchini using a cheese grater
It will not be necessary to peel the courgettes before grating them.
Step 3. In a large bowl, combine the flour, salt, baking soda, baking powder, and cinnamon
Step 4. In a second bowl, mix the beaten eggs, oil, vanilla, and sugar

Advice
- Since the courgette peel is very tender, it will not be necessary to remove it before cooking.
- When you are in your local supermarket, or at the market, choose bright green zucchini, no longer than 20-25 cm.
