Once the filling is added, it's time to roll the tortilla around it. With the edges sealed the wrap is easier to carry and eat. You can choose between different techniques, for example folding it as if it were an envelope or rolling it to obtain a cylinder. Choose the method you prefer based on your personal tastes. The important thing is to arm yourself with patience and a knife to cut the wrap in two after sealing the filling ingredients inside. A little practice is all it takes to fold and close a wrap to perfection.
Steps
Method 1 of 3: Fold the Wrap in the Standard Way
Step 1. Fold the sides of the tortilla towards the center
Bring both sides to the middle of the tortilla. The two flaps must not touch each other; depending on the size of the tortilla, fold them towards the center about 3-7 cm, leaving about 5-7 cm of empty space between them.
By folding the tortilla in this way, the filling will not run out sideways as you eat the wrap
Step 2. Fold the bottom third of the tortilla towards the center
Lift the bottom flap of the tortilla up and bring it to the center. The folded part should be about one third of the height of the tortilla.
The measurements don't have to be perfect, but try to leave about two-thirds of the tortilla exposed to be able to close the wrap tightly in the following steps
Step 3. Arrange the filling while closing the wrap
As you fold the tortilla, the filling may slip out. Push it back towards the center using a fork or your fingers, so that it stays locked inside as you seal the wrap.
If the filling is positioned correctly you will be able to close the wrap better and you will not risk it coming out while you eat it
Step 4. Continue folding the tortilla until you reach the top edge
Hold the wrap with your fingers as you roll it on itself from bottom to top. Aim for a tight, compact roll.
- The wrap should be rolled 1 to 3 times, depending on the diameter of the tortilla.
- The amount of filling also affects the number of times you need to roll the wrap. If it is very full you may only be able to roll it up once. In general, the ideal amount of filling is the one that allows you to roll it up a couple of times.
Step 5. Use some sauce to hold the edges together
Take the sauce you used to flavor the filling and spread a thin layer of it along the inside edge of the tortilla before sealing the wrap. The amount of sauce must be minimal, otherwise it will end up on the outside of the tortilla and you will have a hard time gripping the wrap without getting your fingers dirty.
- It is not mandatory to spread the sauce on the edge of the tortilla, but there is a greater chance that the wrap will remain closed and compact as you serve and eat it.
- It is very important to use a little sauce, otherwise it will end up on the outside of the wrap.
Step 6. Gently squeeze the wrap after sealing it
Once you've rolled it up and spread the sauce over the top edge of the tortilla, roll it up one last time and then gently squeeze it. Turn it over to its wider side and gently press it with your hands or a spatula.
Squeezing it gently serves to keep it in shape and to better distribute the sauce and the filling inside
Step 7. Cut the wrap in half diagonally so it's easier to eat
Place it on the cutting board and use a sharp, clean knife to split it in half with a clean cut. Angle the blade diagonally and press it firmly down to cut the wrap in two in one stroke. Separate the two halves and serve them.
Method 2 of 3: Roll the Cylinder Wrap
Step 1. Fold the bottom edge of the tortilla towards the center
Lift the bottom flap and fold 7-10 cm upwards to completely cover the filling. Push the filling down with the fork to keep it firmly inside the wrap.
Distribute the filling mainly in the center to prevent it from sticking out of the edges. Pushing it down will allow you to seal the wrap better
Step 2. Roll the wrap around itself
Hold it steady with both hands to keep it from opening, then start rolling it up gently. Try to do one smooth motion.
- Roll the tortilla from the bottom to the top edge.
- The movement must be fluid and continuous, otherwise the wrap could open, letting all the contents flow out.
Step 3. Use some sauce to seal the wrap
When you reach the top of the tortilla, block the wrap with one hand and use the other to moisten the inside edge with a thin layer of sauce. Spread the sauce horizontally to a width of about 5-10 cm.
The sauce will act as an adhesive and help keep the wrap closed when cutting, serving and eating
Step 4. Slip the sides of the tortilla inside the wrap
After sealing the top edge, use your fingers to insert the sides of the tortilla into the wrap. Fold the ends towards the center about 3 times, then gently pinch the corners to keep them in shape.
It is essential to seal the edges of the cylinder well otherwise the wrap will open at the first bite
Step 5. Cut the wrap in half diagonally for easy serving
Take a sharp bread knife and place it in the center of the wrap at a 45 degree angle. Press the blade down from the tip to split the wrap in half with a clean cut.
Having cut the wrap in two, the filling will show off and make it even more inviting
Method 3 of 3: Fold the Wrap Like a Burrito
Step 1. Fold the two sides of the tortilla towards the center
Lift the right and left flaps of the tortilla and fold them towards the center overlapping them slightly. The two side folds must match the edge of the air where you have placed the filling; in this way you will be able to seal the wrap better.
Step 2. Roll up the wrap starting from the bottom
Hold the two folds in place with one hand and use the other to bring the bottom flap of the tortilla towards the center. Gently push the filling into the fold using a fork to make the wrap as tight and compact as possible, then continue rolling it until you reach the top edge of the tortilla.
You should be able to roll it up on itself 1 to 3 times
Step 3. Cut the wrap in half and serve on a plate or paper towel
Once rolled up, the wrap is ready to be eaten. Before serving, take a sharp knife and cut it in the center at a 45 degree angle. Place the halves on a plate or wrap them in a paper towel.
