- 210g of all-purpose flour
- 60g of unsweetened cocoa powder
- 7g of baking soda
- 4g of salt
- 100g of pastry fat
- 300g of sugar
- 2 eggs
- 4g of vanilla extract
- 350ml of buttermilk
- 120ml of kirsch
- 115g of butter
- 420g of powdered sugar
- 1 pinch of salt
- 5ml of espresso, strong
- 2 cans of cherries (cultivar "Bing") pitted and drained
- 475ml of whipped whole milk cream
- 2g of vanilla extract
- 15ml of kirsch
- 30g of semi-dark chocolate bar
Steps
Step 1. Turn on the oven to 175 ° C and let it preheat
Step 2. Line the bottom of two round pans with a diameter of 20cm each with parchment paper
Step 3. Sieve the flour, cocoa, baking soda and 4g of salt
Put it all aside.
Step 4. Soften the fat with the sugar until it becomes soft and frothy
Beat in the eggs and vanilla.
Step 5. Pour the buttermilk over the flour mixture, stirring until well blended
Pour the mixture into the two previously prepared pans.
Step 6. Bake at 350 ° F (175 ° C) for 35-40 minutes, then check the doneness with a toothpick:
when it comes out dry, the dough will be cooked.
Step 7. Let it cool completely
Step 8. Peel the paper off the cakes
Step 9. Slice each of the two cakes horizontally to make 4 layers in all
Step 10. Spray the layers with 120ml of kirsch
Step 11. In a medium bowl, whisk the butter until light and soft
Step 12. Combine the icing sugar, a pinch of salt and the coffee; beat everything until you get a velvety cream
If the cream is too thick, add a couple of teaspoons of cherry juice or milk.
Step 13. Cover the first layer of cake with 1/3 of the cream
Step 14. Garnish the side dish with 1/3 of the cherries
