Ingrediants
- 150 g of sugar
- 100 g of mascobado sugar
- 280 g of plain flour
- 1 tablespoon of baking powder
- 1 pinch of salt
- 3 eggs
- 1 teaspoon of vanilla essence
- 250 ml of coconut milk
- 350 g of grated / dried coconut
- 240 g of butter softened at room temperature
Steps
Step 1. Preheat the oven to 170 ° C
Step 2. Beat the butter, vanilla and sugar
In a mixing bowl, pour the white sugar, mascobado sugar, vanilla extract and butter. Place the whisk of the mixer in the bowl and turn it on for a few minutes to mix these ingredients.
Step 3. Break the eggs
Once you have thoroughly beaten these ingredients, lower the speed and start adding the eggs. Break the first one and mix it with the rest of the amalgam. Then, add the second. Turn well and finally break the last egg. Mix everything carefully.
Step 4. Add the remaining ingredients
Continue mixing in the baking powder and salt. Then slowly add half the flour. Always gradually, introduce the coconut milk. Let it all blend evenly before making new additions. Next, mix in some more flour and coconut milk. Finish with the remaining flour. After mixing everything properly, add the coconut flakes and wholemeal quickly by turning on the mixer for a few seconds. Turn it off and remove the whisk. Using a spoon, add the parts of the amalgam still attached to the accessory to the rest of the contents of the bowl. Finally, quickly mix everything by hand, using a rubber spatula.
Step 5. Pour the amalgam into the pan
After greasing the pan, pour the amalgam with a spoon and use the spatula to spread it evenly. At this point, it is ready to be baked.
Step 6. Bake
Place the pan in the center of the oven, which you have preheated to 170 ° C. Cook for about 45 minutes. Check that it is ready by inserting a toothpick into the cake. If it comes out dry, you can take it out of the oven.
Step 7. Put it on a plate and serve it
If you like, sprinkle some icing sugar before slicing and accompany it with whipped cream or strawberries.
Step 8. Finished
Advice
- If you have a few stale slices left over, reheat them for 30-60 seconds in the microwave and sprinkle some custard on the top for a delicious dessert.
- You can also beat the ingredients by hand. Use a plastic spoon and mix them thoroughly, according to the order indicated in the article. This will take more time and work, but the results will still be great.
