When blueberries are available in abundance, Sunday breakfast could include delicious pancakes with these berries. They are simple to make and provide you with all the benefits of the antioxidants found in blueberries.
Ingrediants
- 160 g of sifted 00 flour
- 15 g of yeast
- 15 of sugar (optional)
- 3 g of salt (optional)
- 300 ml of milk
- 1 beaten egg
- 30 ml of vegetable oil
- 100 g of fresh or frozen blueberries
- Butter or syrup to accompany the pancakes
- 1 tablespoon of powdered sugar
Steps
Step 1. In a large bowl combine the flour with the sugar, salt and baking powder
Step 2. Add the beaten egg and milk
Mix the ingredients without worrying too much about lumps, do not overwork the dough or in the end you will have too liquid a batter.
Step 3. Incorporate the blueberries
If you wish, you can add more later.
Step 4. Preheat a pan or non-stick griddle
To evaluate the temperature, splash it with a few drops of water, if it starts to sizzle it means that the pan is ready. Keep it on medium heat, if it is too high it can burn pancakes.
If you want them to have a more "buttery" flavor, add a tablespoon of melted butter to the pan
Step 5. Use a small ladle, spoon or small measuring cup to drop the correct amount of batter into the pot
Add a few blueberries on top of the batter. When you start to see bubbles and the edges of the pancake become dry, flip it over.
Step 6. Remove the pancake from the pan when both sides are golden brown
Put it on kitchen paper for a few seconds to absorb the excess grease. Serve it with butter and syrup.

Advice
- Make sure you defrost the blueberries if you are using frozen ones. Frozen fruit prevents pancakes from cooking evenly, so use fresh fruit if possible.
- If you don't have a non-stick pan, add some oil or butter before pouring a spoonful of batter into the pan.
- Do not leave the lumps, they are usually thick accumulations of flour that no one likes in their pancake!
- Make the batter the night before and put it in the fridge. This way you will get thin and delicious pancakes.
- Make sure one side is well cooked before flipping the pancake or it will break.
