The acidity of the buttermilk allows you to add a sweet and sour touch to your pancakes. If you don't have buttermilk, you can replace it by mixing 1 tablespoon of vinegar or lemon juice with a cup of regular milk, or if you're feeling particularly ambitious, try making it yourself.
Ingrediants
- 280 g of flour
- 1 tablespoon of baking soda
- 2 tablespoons of yeast
- 4 tablespoons of sugar
- Half a teaspoon of salt
- 2 eggs (beaten)
- 600 ml of buttermilk
- 1 teaspoon of vanilla extract
- 50 g butter (melted)
- 100 ml of vegetable oil
- Maple syrup
- Fruit
Steps

Step 1. Take a bowl and mix all the dry ingredients together (sugar, baking powder, baking soda, salt and flour)

Step 2. Start mixing the wet ingredients in the dry bowl (buttermilk, vanilla extract, egg and butter)
Continue only until the ingredients are combined; ignore the lumps for now.

Step 3. Turn on the stove over medium heat and put a pan on the stove
Pour some oil into the pan.

Step 4. Take a ladle and pour in a good dose of pancake batter
Pour it into the pan and cook for 3 minutes or until bubbles form at the top of the pancake.

Step 5. Take a spatula and carefully try to turn the pancake
After flipping it, cook it for about a minute on that side. Wait for the pancake to turn a nice golden brown color and place it on a plate.

Step 6. Repeat the cooking steps for the other pancakes

Step 7. Serve with maple syrup and the fruit of your choice, such as strawberries
Advice
- Don't beat the dough too hard, or your pancakes will be tough. Mix the ingredients enough to blend them.
- If you're using bacon as a side dish, you can add half a cup of bacon fat instead of vegetable oil. Or use melted butter. This way your pancakes will turn golden brown.
- To make the pancakes especially soft, try separating and whipping the egg whites into fluffy peaks and then inserting them into the final dough before baking.
- To remove lumps of baking soda, pour it through a sieve instead of putting it directly into the bowl.
- If you wish, add some chocolate.
