In the morning, nothing beats a stack of fluffy and tasty pancakes to start the day off right. This typically US breakfast is enjoyed just about everywhere, but when you don't have guests it can be a waste to make lots of pancakes. Fortunately, the problem can be remedied. Follow this one-person recipe and you'll have enough pancakes to start off on the right foot.

Simple Pancakes
- 160 g of flour
- 1 tablespoon of sugar
- 3, 5 g of baking powder
- 250 ml of milk
- 15 g melted butter (add additional butter for the griddle)
- 1 egg
- 1 pinch of salt
- Gasket of your choice

- 90 g of chocolate chips
- Zest of 2 lemons
- 60 ml of lemon juice (about 2 squeezed lemons)

Method 1 of 2: Simple Pancakes
Step 1. Measure the ingredients
If you want, you can also measure each ingredient as you go along with the preparation. In any case, it is advisable to take care of this before you start: when you cook for one person, it becomes easier to clean, since you can simply put all the dirty measuring spoons in the sink immediately after using them.
Step 2. Mix the dry ingredients
Pour the flour, sugar, and baking powder into a bowl, then add a pinch of salt. Stir until you get a uniform result.
Step 3. Add the wet ingredients
Pour the milk, egg, and melted butter into the bowl. Mix until a homogeneous result is obtained. It would be better to beat the egg lightly to make the yellow streaks of the yolk disappear.
Step 4. Melt the butter in a hot pan
Place the pan on the stove over medium-high heat. Add a generous piece of butter (about 15-30g). Use a spatula to spread the butter over the surface and coat the bottom of the pan. Let it melt completely and heat up to foam.
Step 5. Pour in 1/3 of the mixture at a time
You should have enough batter to make 3 medium pancakes. If the pan is large enough, it is possible to cook multiple pancakes in different parts at the same time. If it's small, try cooking one at a time instead.
Step 6. Turn them over after a few minutes
After about 3 minutes, use a spatula to lift the edges of the pancake. If it lifts smoothly out of the pan and has a nice golden color, it's ready to turn. If it looks mushy and has a pale yellow color, let it cook a little longer.
- To turn a pancake, stick the spatula under the entire pancake and lift it from the boiling pan. With a single twisting motion of your wrist, turn it over and place the uncooked portion on the surface of the pan.
- If necessary, add a little more butter to the pan to prevent pancakes from sticking.
Step 7. Serve the pancakes with your favorite topping
Once the pancake is cooked on both sides, move it from the pan to a clean plate. You should soon have a stack of 3 fluffy pancakes. At this point, you can season them as you like and enjoy them. Here are some of the tastiest toppings:

Step 1. Try making berry pancakes
Just incorporate a handful of berries into the batter to give the pancakes a delicious fruity twist. Once the pancakes are ready, you won't notice.

- To get the rinds, use a fine grater, such as Microplane ones, to grate the outermost layer of the peel directly into the bowl. You don't need much: if the skin turns white, you're grating too much.

Step 4. Try some tasty vegetable pancakes
If you're looking to add more servings of vegetables to your diet, try this delight by incorporating julienne carrots, onions, green beans, and garlic into the batter. - Just change the doses slightly to change the consistency of the batter. If it is too thick, add a little more milk and mix. If it's too watery, add a pinch of extra flour.
- Pancake batter can generally be stored for up to 2 days in the fridge, provided it is stored in an airtight container. You can leave it in the freezer for several months.
