Breaded prawns are popular and popular all over the world: in homes, in high-class restaurants and even in fast-food restaurants. Although the breading may vary from recipe to recipe, there is only one specific process to follow to ensure perfect browning and crunchiness. You can choose to use your own size shrimp, although breading large shellfish can be slightly easier. Let's see how to proceed.
Ingrediants
- Raw, peeled and intestine-deprived shrimp (choose whether to leave the tail)
- Breading (Breadcrumbs, Japanese tempura mix, corn flour, flaked or mashed cereals, etc.)
- Egg or other liquid with a viscous consistency
- Flour
- Salt, pepper and seasonings to taste
Steps
Method 1 of 3: The Process
Step 1. Prepare your breading area
- In a bowl, combine 1 egg with 15ml of water. Stir with a fork mixing the two ingredients.
- In a second bowl, combine 125 g of flour with 1 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Stir carefully to combine the ingredients.
- In a third bowl, pour 125 g of Japanese tempura breadcrumbs or breadcrumbs of your choice. The Japanese tempura mix creates a light and crumbly breading.
Step 2. Prepare the shrimp
- If your raw shrimp hasn't been peeled and gut-free, you'll have to do it yourself. Choose whether to remove or keep the queue.
- When all the prawns are ready, take one and flour it carefully in the second bowl. Then dip the shrimp into the egg and, as a last step, bread it evenly in the breadcrumbs. The flour and egg will act as glues, allowing the breading to adhere to the shrimp. Place the shrimp on a sheet of parchment paper or a non-stick surface. Continue and bread all the prawns.
Method 2 of 3: Frying the Shrimp
Step 1. Heat the oil
Preheat the oil in a saucepan or deep fryer bringing it to a temperature of 190 ° C. If you have a deep fryer, follow the directions in the manual and use the appropriate amount of oil. When the oil has reached the correct temperature, dip the shrimp in without exaggerating the quantities
Step 2. Fry the shrimp
Cook them for the necessary time: 1 or 2 minutes for medium shrimp, about 3 minutes for large shrimp. When they are golden and crunchy, remove them from the oil. Let them drain on absorbent paper for about 1 minute before serving
Method 3 of 3: Baking
Step 1. Bake the shrimp in the oven
Preheat the oven to 230 ° C. Place the raw shrimp on a baking sheet lined with parchment paper. Create a single layer and lightly grease them with oil to encourage browning. Cook them for about 10 to 15 minutes, depending on their size. Cut a shrimp to check how well it is cooked, if the pulp has become opaque, it means that they are ready
Step 2. Serve them alone or accompany them with tartar or sweet and sour sauce
Advice
- You can replace the tempura breading with breadcrumbs, cornmeal, and crumbled or flaked cereals. If you wish, add to the breadcrumbs any toppings of your choice, such as dried fruit, coconut flakes, herbs or spices, they will flavor your shrimp making them even more delicious.
- You can replace the egg mixture with a sauce of your choice or with buttermilk. Both will act as glues just like beaten egg, favoring the adhesion of the breadcrumbs to the shrimp.
