Sweet potatoes are a very nutritious form of carbohydrates. They contain little sodium, fat and cholesterol but are rich in fiber, vitamin A, B6, potassium and manganese. If you want a healthy alternative to potato chips, you can dehydrate this tuber in the oven or with a dryer.

Method 1 of 2: In the Dryer
Step 1. Buy a dryer
A sweet potato can take up all the available space of a small model, but it will take 2-4 tubers to fill a large one.
Step 2. Wash the peel of the potatoes
If you wish, you can avoid peeling them as the peel is rich in nutrients.
Step 3. Get a sharp knife or mandolin
The latter is ideal for slicing potatoes with the aim of dehydrating them, because the slices will all be of the same thickness. Set the mandolin blade to 0.3 cm.
Step 4. Press the potato onto the mandolin and move it back and forth by slicing the tuber into slices

Step 5. Leave the slices to soak for an hour in a bowl full of water
After 30 minutes, the water changes. In this way, you eliminate excess starch and the potatoes will be more crunchy.
You can also blanch them for a couple of minutes so they will stay clear and retain nutrients
Step 6. Place the slices on a tea towel and pat them dry
They must be well dry.
Step 7. Sprinkle them with olive or coconut oil (previously melted)
About two tablespoons of oil will be needed for each potato.
Step 8. Add sea salt or other flavorings of your choice, such as onion powder, chilli, or cumin
Step 9. Turn on the dryer and set the temperature to 63 ° C
If you have an older model, set it to 68 ° C as it will tend to cool down.
Step 10. Arrange the slices in an even layer on the appliance trays
Dry them for 12 hours.
Step 11. Remove them from the dryer and let them cool on a rack
Store them in a sealable plastic bag.
Method 2 of 2: In the Oven
Step 1. Wash the potatoes with a vegetable brush
Take them one at a time.
Step 2. Slice them with a mandolin setting the blade at 0.15-0.3cm
Step 3. Arrange the slices on kitchen paper and sprinkle them with sea salt
Cover them with additional kitchen paper and let them rest for 15 minutes.
If the paper gets wet, replace it to eliminate moisture
Step 4. Preheat the oven to a low temperature
The ideal would be between 52 ° C and 63 ° C.
Step 5. Place a cooling rack on top of the baking sheet to improvise a dryer
Step 6. Grease the potatoes with a thin layer of olive or coconut oil

Step 7. Place the grill in the oven
Leave the door ajar.
Step 8. Dry the potatoes for 12 hours
Remove them from the oven and let them cool on the kitchen counter. Store them in a sealable plastic bag.
