Peaches in syrup are great eaten alone, but they are even more so when added to a homemade tart. Learn to prepare a peach preserve and keep it in the pantry, when an unexpected guest arrives you will know how to amaze him.

Steps
Step 1. Sterilize your jars by washing them alone in the dishwasher
Meanwhile, boil the lids in a saucepan. Keep the jars warm to prevent them from breaking when you add the hot fruit. Let the lids boil until ready to use to seal the jars securely.
Get a magnetic lid lifter and remove the lids from boiling water safely. Wear rubber gloves to protect your hands
Step 2. Wash the peaches under cold running water
Step 3. Blanch the peaches to be able to peel them easily
It will only take a few minutes, the skin will begin to peel off and the enzymes that cause the peaches to deteriorate during storage will be eliminated.
Step 4. Cut the peaches into quarters and remove the stones
Step 5. Fill the jars with the peaches and leave a generous 1cm from the rim
Press the peaches to leave no gaps.
Step 6. Pour boiling water into each jar
Use the water in which you blanched the peaches.
Step 7. Add 1 or 2 tablespoons of sugar
During storage it will melt and sweeten your peaches.
Step 8. Clean the jars of any residual sugar and liquid
Pay particular attention to the area where you are going to place the lid. Then plug them carefully.
Step 9. Place the jars in a pressure cooker, immerse them and leave a couple of inches of water on top of the jars
Step 10. Calculate the required sterilization time
The type of pot and the altitude you are at will be the determining factors. Read the instructions for your pot.
- If you are using a canning pot these guidelines will help you. For an altitude of 0 to 300m, cook for 10 minutes. From 300 to 900 m cook for 15 minutes. From 900 to 1800 m cook for 20 minutes. For higher altitudes, cook for 25 minutes.
- If you are using a pressure cooker read the instructions. This will normally take about 8 minutes.
Advice
- 2 kg of peaches will turn into a scarce kg of peach preserve.
- Add lemon juice to the boiling water to prevent the peaches from turning black after being peeled.
