Chicken Fried Rice is a very popular dish in Chinese restaurants in many countries around the world. This is a great recipe that can be easily replicated in your home too, allowing you to take advantage of leftovers that would otherwise be thrown away, such as cold rice, eggs, chopped chicken and fresh or frozen vegetables. Here are the simple steps to make a great chicken fried rice.

- Cold white rice already cooked
- Extra virgin olive oil
- Chicken in pieces
- Onion
- Fresh or frozen peas
- Egg
- Fresh carrots
- Spring onion
- Garlic
- Soy sauce
- Sesame oil (optional)
Steps
Method 1 of 5: Prepare the Rice
Step 1. Use 600g of cooked white rice
In this recipe you can use it as soon as it is removed from the refrigerator.

If you don't have any leftover rice, follow these simple instructions: Bring 480ml water to a boil. Add 370 g of basmati rice. Cover the pot and reduce the heat to low. Cook slowly for about 20 minutes. When almost cooked, be careful that the rice does not stick. When the rice is cooked, move the pot to a cold stove and wait 5 minutes. After the necessary time, mix it gently with a fork to incorporate air and make it fluffy. Pour the rice into a baking dish and bring it to room temperature.

If you have a rice cooker available, use it in this recipe to cook rice faster. At the end of cooking, however, let it cool in a baking dish until it reaches room temperature.
Method 2 of 5: Cook the Chicken
Step 1. Purchase a boneless, skinless chicken breast
Cut it into small pieces and season with salt and pepper according to your taste.
Step 2. In a large skillet or wok, heat 30-45ml of extra virgin olive oil using medium-high heat
Move the pan gently so that the oil can grease the entire bottom.
Step 3. Fry the chicken
Quickly stir-fry it until completely cooked, then remove it using a slotted spoon.
Step 4. Cover the chicken to keep it warm during the other steps of the recipe
Method 3 of 5: Cook the Vegetables
Step 1. Dice a small onion and 2 cloves of garlic
Step 2. Remove the pea and carrot packages from the freezer
Step 3. In the same pan in which you cooked the chicken, pour another 15 ml of extra virgin olive oil
Only perform this step if the bottom of the pan is not sufficiently greasy.

If you wish, you can use fresh peas and carrots, being careful to cut the carrots before you start cooking.
Step 4. Pour the onion, peas and carrots into the hot pot
Mix all the ingredients carefully using a wooden spoon. Cook them for 2 minutes, or until the vegetables have softened.
Step 5. Add the garlic only during the last minute or 30 seconds of cooking to avoid burning
Method 4 of 5: Add the Eggs
Step 1. In a small bowl, beat 3 large eggs using a whisk
Step 2. Create some space in the pan with the vegetables in which you can scramble the eggs
Add a few drops of extra virgin olive oil if the bottom of the pan is devoid of it.
Step 3. Cook the eggs
As soon as they start to fry, mix them using the wooden spoon. When the eggs are ready, you can mix them with the vegetables and distribute them evenly.
Method 5 of 5: Saute the Rice
Step 1. If there is not enough to fry the rice, add more extra virgin olive oil to the pan
The amount of oil needed varies according to your tastes and how greasy you want your fried rice to be.
Step 2. Add the cold rice to the pan
Step 3. Add the chicken and mix carefully to combine the ingredients
Step 4. Season the rice using 60ml of soy sauce
Step 5. Quickly toss all the ingredients using medium-high heat, they will fry cooking and stirring evenly
Step 6. At the end of cooking the liquids must have evaporated and the rice must have taken on a golden color
Step 7. Decorate with a lemon wedge and serve immediately to the table
