When cooking caramel, timing is of the essence, and while the sugar is boiling you won't be able to waste precious seconds searching for the necessary utensils.
Method 2 of 2: Part 2: Prepare the Caramel
Step 1. Place a large, thick-bottomed pot on the stove
Step 2. Pour the sugar into the pot and turn on a medium high heat
Step 3. With a whisk or spoon, stir the sugar quickly until it comes to a boil
When the sugar starts to boil you can choose to keep stirring or move the pot in circular motions.
Step 4. When the sugar is completely dissolved, you can stop mixing
Step 5. Add the butter to the pot
The mixture will become foamy, stir without stopping until the butter is completely melted.
Step 6. Remove the pot from the heat and wait 2 or 3 seconds
Step 7. Carefully pour the cream into the pot and keep stirring until you get a smooth and homogeneous mixture
Step 8. Let the caramel cool in the pot for a few minutes, then transfer it to a heat-resistant container
Step 9. Store your caramel in the refrigerator and consume it within the next 2 weeks
Advice
- If you want to make salted caramel, after incorporating the cream, add 1 tablespoon of fleur de sel or sea salt.
- Heat the caramel to make it easier to pour.
