Chocolate chip cookies are a timeless classic. However, if you prefer to make soft pastries rather than crunchy, this variant is perfect for you! Brown sugar is the secret of their softness, because this type of sweetener increases the moisture level inside the cookie, making it softer.
Ingrediants
For about 24 medium-sized cookies:
- 200 g of white sugar
- 70 g of brown sugar
- 1/2 teaspoon of salt
- 2 eggs
- 230 g of Butter at room temperature
- 300 g of flour
- 1 tablespoon of baking soda
- 1 tablespoon of vanilla
- 2 tablespoons of milk
- Up to 2 cups of small Chocolate chips (reduce quantity if large)
Steps
Step 1. Preheat the oven to 180 ° C
Step 2. Combine the vanilla, eggs, butter, white and brown sugar in a bowl
- Use granulated sugar for more consistent and chewy cookies. When the sugar dissolves, it makes the mixture softer by interfering with the structure of the dough. So, if you want fluffy cookies, use powdered sugar which melts more easily, but for tasty chewy cookies, use granulated sugar. Avoid any type of sugar containing corn starch, as this will give you an unexpected result.
- Mix the ingredients until you get a creamy mixture.
Step 3. Add flour, salt and baking soda
Step 4. Stir to mix the ingredients completely, then add the milk to make a smooth dough
Finally, add the chocolate chips as well.
Step 5. Grease the pan with non-stick spray to prevent the cookies from sticking
Alternatively, you can line the pan with parchment paper.
Step 6. Make a dough ball for each cookie
Step 7. Place the ball on the baking sheet
Step 8. Flatten each cookie with a fork leaving distinct grooves on the surface
Step 9. Place the cookies in the oven for about 8 to 10 minutes
Do not let them cook for too long, as they will continue to cook even after they have been removed from the oven.
Step 10. Remove the cookies from the oven and let them cool for about 15 minutes on the rack
Beware of melted chocolate: To avoid burns, transfer the cookies from the pan to the grill using a spatula. The cookies are ready to eat when the chocolate solidifies.
Step 11. Store the cookies in an airtight container, or consume them all as soon as they have cooled

- If you prefer, you can use more drops or mix different types of chocolate to make these cookies even tastier.
- Choose whether to use milk or dark chocolate chips according to your tastes.
- Instead of chocolate, you can use raisins or other dried fruit, such as dried almonds, cherries, and blackberries. Be creative!
