Quiche is an exquisite flan, perfect for breakfast, lunch or dinner. Depending on the filling used, this quiche can also be quite healthy. Unfortunately, however, if you are controlling your carbohydrate intake, this dish may not be for you, but it is by no means necessary to give it up completely. By adopting certain precautions, it is possible to prepare a version without a crust that is just as good, but with fewer carbohydrates!

Doses for 6 servings
Steps
Method 1 of 3: Make a Plain Crustless Quiche
Step 1. Preheat the oven to 160 ° C
Make sure you place the grill in the center.
Step 2. Generously grease a 23 cm diameter tart pan with butter
Since this quiche doesn't have a crust, you need to make sure it doesn't stick to the pan. If you prefer to serve it in single portions, grease 4 or 6 cups with butter instead.
Step 3. Beat the eggs
Break 3 eggs into a large bowl. Beat them with a whisk until the yolks melt and mix with the egg whites.
Step 4. Heat the cream, equal parts milk and cream mixture or milk
Pour 1 cup (250 ml) of your chosen ingredient into a saucepan. Heat it over low heat - the liquid should become hot, but don't let it simmer.
For a more intense taste, mix cooking cream, milk and milk and cream mixture
Step 5. Pour the hot liquid over the eggs
Gently mix the mixture until smooth.
Step 6. Add the cheeses
Measure both and incorporate them into the eggs. Alternatively, you can also use 100g of just one type of cheese to make the quiche taste more delicate.
- If you don't have gruyere, try using emmental or cantal instead.
- If you don't have Parmesan, try hard pecorino.
Step 7. Incorporate the toppings
Add half a teaspoon of salt and a pinch of cayenne pepper. You can change these doses to your liking.
Cayenne pepper can be substituted for paprika
Step 8. Mix the ingredients until smooth
To make sure the mixture mixes well, collect any residue stuck to the bottom and sides of the bowl.
Step 9. Pour the mixture into the mold
Use a rubber spatula to help you pour it into the pan and distribute it evenly. If you use baking cups, try helping yourself with a ladle instead to make sure you pour the same amount into each individual bowl.
Step 10. Bake the quiche for 20 to 30 minutes
It will be ready when it has taken on an almost solid consistency. If you shake it, it should shake slightly.
Step 11. Let it cool down a bit before serving
Place it on a cooling rack for about 10 minutes. If you made single servings, they will cool down first. Serve the flan hot.
Method 2 of 3: Make Spinach Quiche
Step 1. Preheat the oven to 180 ° C
Make sure you place the rack in the center of the oven.
Step 2. Generously grease a 23 cm diameter tart pan
This is a vital step in making sure the quiche comes out easily when serving. To make mini flans, grease a muffin pan instead.
Step 3. Brown the onion in a skillet over medium-high heat
Heat 1 tablespoon (15 ml) of vegetable oil in a large skillet over medium-high heat. Chop an onion and put it to cook. Let it brown, stirring often until it wilts.
Step 4. Add the spinach and cook until the water is completely removed
Place 300 g of thawed spinach in the pan. Cook them by stirring them often: they should expel all the water they contain. This will ensure that they do not release any liquid when cooking the quiche, otherwise it will become soggy.
Step 5. Mix the eggs, cheese, salt and pepper
Break 5 large eggs and place them in a large bowl. Add 200-300 g of cheese cut into strips, then season with salt and pepper. Stir with a whisk until a homogeneous blend is obtained.
To make a soft, moist flan, add 60ml of milk
Step 6. Add the spinach and onion
Incorporate the spinach and onion mixture into the egg bowl with the help of a spatula. Mix the ingredients with a wooden spoon until you get a smooth blend.
Step 7. Pour the mixture into the mold you made
Help yourself with a rubber spatula to pour it into the pan and distribute it evenly. If you're using a muffin pan, fill each compartment halfway with a soup ladle.
Step 8. Bake the quiche for 30 minutes
Make sure you place the rack in the center of the oven. The flan will be ready when the eggs have thickened.
If you have also incorporated milk, add 4 or 5 minutes to the total cooking time
Step 9. Let the quiche cool before serving
Remove from the oven and let it cool on a wire rack for 10 minutes. Slice and serve it directly from the pan with the help of a spatula.
Method 3 of 3: Try Variations
Step 1. Try to make it tastier
Before pouring the mixture into the tart pan, baking cups or muffin pan, you can add tasty ingredients such as shredded ham, vegetables or herbs. Choose some of the ingredients listed in the steps below to make an even better crustless quiche.
Step 2. To make it more substantial, add some sausages
You will need 115g of minced or diced cold cuts, such as bacon, ham or salami. If you're using bacon or ham, be sure to cook it first.
Step 3. To make a hearty and healthy flan, add chopped vegetables
You will need 200 or 300 g. Some of the most suitable? Browned asparagus, broccoli, braised leeks, mushrooms, browned onions, peppers, spinach and tomatoes.
Step 4. Experiment with different types of cheese
You can use only one type or try various combinations. In total you will need 100 g of cheese. Here are some of the most recommended to prepare a savory pie: cheddar, fontina, gouda, goat cheese, gruyere, mozzarella, parmesan, provolone, pecorino and emmental. It can be grated, cut into strips or crumbled.
Ham and Swiss cheese go very well together
Step 5. Use herbs to make an even tastier flan
You can add them to eggs alone or mix them with cheese, vegetables and sausages. You will need 1 or 4 tablespoons of chopped fresh herbs. Here are some of the most recommended: basil, chives, dill, marjoram, parsley, rosemary and tarragon. You can choose just one or use a mixture of herbs.
Step 6. Enjoy your meal
Advice
- Use baking cups or a muffin pan to make single servings.
- Cover the leftovers with cling film and put them in the fridge. Eat them within 4 days.
- Experiment with different types of cheeses, toppings, and fillings.
- If you use water-rich vegetables and greens, such as zucchini, add 1 tablespoon (8 g) of all-purpose flour to the egg mixture to absorb excess liquid.
- If the quiche starts to brown too quickly during cooking, cover it with a sheet of aluminum foil.
