Similar to cottage cheese or cottage cheese, 'curds and whay' is a simple recipe to make at home, with no special ingredients or utensils required. Ingrediants
- 480 ml of milk
- 4 teaspoons of vinegar (alternatively you can use 4 teaspoons of lemon or orange juice, to obtain a sweet cheese with a sweeter taste, perfect for making a cheesecake. If the milk does not seem to curdle, add 1 or 2 additional teaspoons of the chosen juice)
Steps
Step 1. Pour the milk into the pot
Bring it to a simmer, stirring constantly. It is very important never to stop mixing the milk, otherwise it will burn.
Step 2. When the milk has reached a boil, turn off the heat
Leave the saucepan on the hot stove for the milk to cool slowly.
Step 3. Pour the vinegar into the boiling milk
At this point, the milk should curdle. Filter the fresh cheese and store it separately from the whey. Use it as you wish.
