Many believe that, to be perfect, baked potatoes must have a crisp skin and a soft, floury interior. However, to achieve this, a special cooking process and method is required. Baked potatoes take time; alternatively you can cook them in the microwave, but this way you will not get a crunchy skin.

Step 1. Choose the right type of potato
A good result requires good ingredients. When prepared correctly, Russet varieties form a crunchy skin, partly due to the starch content. The red potato is also a good choice. The other types can be baked in the oven, but don't expect this feature. Choose those specimens that have no spots or buds and that seem firm to the touch
