You can enjoy pancakes even without ingesting high carbohydrate or sugar content. To make low-carb pancakes, simply replace the flour and sugar with other lighter, healthier ingredients. You naturally want them to taste the same as regular pancakes and spend a reasonable amount to make them so you can easily add them to your low-carb diet.
Servings: 2 large pancakes or 6 small pancakes.
Ingrediants
- 2 egg whites or 2 whole eggs (or an egg substitute)
- 2/3 cup (88g) of protein powder (instead of flour)
- 1/2 cup (66g) of water (or skim milk)
- 1/4 cup (33 g) of cooking oil or butter
- 1/2 - 1 teaspoon baking powder (as an experiment)
- A sugar substitute (optional). You can avoid adding a sweetener if the protein powder mixture is already sweetened.
- 1/4 teaspoon of salt (optional)
- 1/2 tablespoons butter or cooking oil (for the pan)
Steps
Step 1. Choose the type of protein powder you prefer
You can find different types in grocery stores or pharmacies.
You may want to purchase a simple, sugar-free type of protein powder, or a powdered protein drink (similar to flour)
Step 2. Combine and mix dry ingredients in a bowl
Step 3. Add the liquid ingredients to the bowl
Use enough liquid (milk / water, etc.) for the batter to pour and distribute easily, but make sure it's not too runny in consistency. Mix it well. You can add more protein powder if you want a thicker batter.
- Instead of milk or other milk substitutes, you can use sour cream (with a little water) or milk butter.
- Vary the ingredients by adding cinnamon, fruit, nuts, or pre-cooked meat balls to the top of the pancakes as they cook, or mix them into the batter.
Step 4. Heat the butter or oil in a pan
Add half the oil or butter initially, saving the rest for later pancakes. Bring the temperature of the pan to around 190 ° C, or until a drop of water reacts on the surface.
Step 5. Pour the batter into the pan
Cook the pancake on one side for about 25 to 30 seconds, or until bubbles form and leave holes in them when they burst.
Step 6. Flip the pancake over and cook on the other side
Cook again for about 25 - 30 seconds.
Experiment with cooking time based on the intensity of the heat and the density of the batter
Step 7. Remove the pancake from the pan
If necessary, add more oil or butter to the pan.
Step 8. Add a sugar substitute to your pancakes (optional)
If you prefer, you can sprinkle it on the pancakes when cooked.
After cooking, you can pour sugar-free syrup or jam on the pancakes, or add a spoonful of yogurt. "Splenda" is a commonly used sweetener
Advice
- With protein powder you can make excellent pancakes to use as pizzas or wraps.
- For thinner pancakes, just add more milk or water. For thicker pancakes instead, just add thicker ingredients or an extra teaspoon of protein powder.
- If you add more eggs and make the batter less dense, you can roll the pancakes as if they were crepes.
- Consult your doctor for clarification and read articles on low-carb diets.
