Banana bread is a great dessert to enjoy for breakfast or dessert. Making a whole loaf cake takes a lot of work, but luckily you can cut the time in half by making a smaller portion in the microwave. Although the result is not the same, it is still a tasty recipe to try when you are in the mood for sweet. Depending on the power of the microwave, this should only take you 2-3 minutes.

- 2 tablespoons (15 g) of coconut flour
- A pinch of baking powder
- 2 teaspoons of muscovado sugar
- 60 ml of almond milk
- Half ripe banana pulped
- 1 tablespoon (15 g) of dried fruit butter
Doses for 1 person
Steps
Method 1 of 3: Classic Banana Bread
Step 1. Combine the dry ingredients, ie flour, sugar, and baking powder in a bowl
Beat them until smooth.
Step 2. Mix the wet ingredients, milk, oil, and vanilla extract, in a microwave-safe bowl
Also add a peeled ripe banana pulverized. Stir until you get a homogeneous mixture.
- To make it easier to remove the cake, lightly grease the bowl with cooking spray, oil, or butter.
- You can also use a large microwave-safe cup. To allow the cake to rise, the batter should be poured more or less up to half.
Step 3. Mix the dry and wet ingredients until all lumps are removed
Make sure you collect the batter that remains on the bottom and sides of the bowl often.
Step 4. Cook the cake for a maximum of about 2 minutes
Stick a toothpick in the center - if it comes out clean, it's ready. Depending on the microwave power, this should take about 2 minutes.
Step 5. Let the cake cool before serving
You can eat it straight from the bowl or plate it up. To make it even tastier, spread a chocolate and hazelnut cream on it.
Method 2 of 3: Healthy Banana Bread
Step 1. Grease a large microwave-safe cup with cooking spray to make it easier to remove the cake after cooking
The spray can be replaced with butter, coconut oil, or another type of cooking oil.
Step 2. Add the dry ingredients, ie coconut flour, ground cinnamon, and baking powder to the cup
Add a pinch of salt and mix with a fork or mini whisk to make sure you evenly distribute the spices and salt throughout the batter.
- Coconut flour is healthy, great as a substitute for regular flour. In addition to being rich in fiber, it allows you to obtain a soft consistency, similar to that of a cake.
- You can also use 4 tablespoons (25 g) of almond flour, which creates a light, spongy, pudding-like texture.
Step 3. Add the wet ingredients
Measure the milk and pour it into the cup. To make banana bread sweeter, add maple syrup, which you can replace with honey or agave nectar if you don't have it or you don't like it.
Step 4. Add the other ingredients
Peel a ripe banana and grind it to a pulp, then add it to the cup. Lightly beat an egg and pour it into the bowl. For a crisper dessert, add some chopped walnuts.
Step 5. Stir the batter once more using a fork or spoon
Make sure to collect residues from the bottom or sides often to get a smooth mixture.
Step 6. Put the cup in the microwave and cook the cake for 3 minutes maximum
If you used almond flour, allow for 3.5 minutes instead. It may rise during cooking, but it will deflate after turning off the microwave.
Step 7. Let it cool before serving
Once the dessert is at room temperature, you can enjoy it with a fork or spoon. If you want, you can also take it out of the cup and serve it up.
Method 3 of 3: Vegan and Gluten Free Banana Bread
Step 1. Lightly grease the inside of a large microwave-safe mug
You can use vegan cooking spray or coconut oil to make it easier to remove from the cup after cooking.
Step 2. Pour the coconut flour and baking powder into the cup
Stir with a fork or mini whisk.
Step 3. Add the muscovado sugar and milk, which can be almond, coconut or soy
Stir the batter once more.
Step 4. Add the banana and nut butter
Peel and pulp a ripe banana, then put it in the cup. Pour your favorite nut butter (such as almonds, peanuts, etc.) into it as well.
If you have a nut allergy, try soy nut or sunflower seed butter
Step 5. Stir the ingredients with a spoon or fork until smooth
Collect batter residue on the bottom and sides of the cup often.
Step 6. Cook the cake for a maximum of 2, 5-3 minutes
The times depend on the power of the microwave and the type of cup used. It may rise during cooking, but will deflate after turning off the oven.
Step 7. Enjoy your meal

- To keep the oven clean, place a tissue, napkin, or paper plate under the cup.
- Cooking times are purely indicative and may vary according to the power of the microwave.
- You can bake the cake in a microwave-safe cup at 180 ° C for 10-12 minutes.
