Cheese broccoli soup is a delicious and perfect dish to brighten up a quiet winter evening. You can decide to prepare it with fresh broccoli, or prefer frozen ones, and choose the cheese you like best. This recipe uses cheddar cheese and fresh broccoli. Ingrediants
- 15 ml of melted butter
- 1/2 onion, chopped
- 55 ml of melted butter
- 25 g of flour
- 480 ml of milk and cream in equal parts
- 480 ml of Chicken Broth
- 225 g chopped fresh broccoli
- 50 g of carrots cut into julienne strips
- Salt and Pepper To Taste.
- 1 g of nutmeg (optional)
- 225 g of grated Cheddar
Steps
Method 1 of 3: Prepare the Base
Step 1. Fry the onions
Melt a small amount of butter in a pan. As soon as it is hot, add the chopped onion. Cook it until translucent, then remove the pan from the heat and set it aside.
Step 2. Melt the butter in a saucepan
Pour it into a thick-bottomed, or cast-iron pot, and heat it over medium heat. Let it melt until it starts to sizzle.
Step 3. Add the flour to make the roux
Mix and blend the flour using a whisk, let the mixture thicken and take on a slightly golden color. Never stop stirring to prevent the ingredients from burning or browning excessively. After about 3 - 5 minutes, when they have reached the appropriate browning, continue with the recipe.
Step 4. Add the liquids
When the roux is ready, add the milk and cream mixture in equal parts. Incorporate the chicken stock as well and never stop stirring. You will need to get a smooth and homogeneous mixture.
Step 5. Simmer the base
Reduce the heat and simmer the liquid mixture for about twenty minutes. Meanwhile, prepare the remaining ingredients.

Do not allow the soup base to come to a boil; if it gets too hot, reduce the heat further.

If you love spicy flavors, add black pepper and cayenne pepper to the base.
Method 2 of 3: Cook the Broccoli and Vegetables
Step 1. Add the broccoli, carrots and onions
Pour them into the soup base and mix carefully. Cook the vegetables on low heat until tender, this will take about 25 minutes.

As before, be careful and don't allow the soup to come to a boil.

Taste the soup and decide whether to spice it further.
Step 2. Cook the soup until thick
A cooking of 25 minutes should be enough to thicken it; remove it from the heat as soon as it reaches the desired consistency.
Step 3. Taste the soup again
Add more salt and pepper to taste, and opt for your favorite spices, such as nutmeg. Stir to distribute the dressing evenly.
Step 4. Blend the soup
Repeatedly, transfer the soup to a blender and turn it into a soft cream. Then return it to the cooking pot and continue cooking over medium heat.

If you prefer the broccoli and vegetables to remain whole, you can omit the previous step or blend only part of the soup.

If you have a hand blender available, use it to avoid transferring the soup multiple times.
Method 3 of 3: Complete the Soup
Step 1. Add the cheese
Incorporate the grated cheese into the hot soup. Stir with a spoon and let it melt completely. Taste the soup. When all the flavors have blended well, you can serve your soup.
Step 2. Serve the soup
Pour it into bowls and serve accompanied with slices of crusty bread or rice.
