Calamondino juice is a popular drink in the Philippines and other parts of Southeast Asia. Some people drink calamondine juice to heal a cold, cough, or flu as part of a fluid therapy.
Steps
Step 1. Wash and dry your small fruits
Step 2. Cut off the top of the calamondino, but be careful not to score the seeds
The seeds contribute to the astringent properties.
Step 3. Squeeze the fruit by hand or with a juicer
Step 4. Add 1 3/4 part sugar to each part of water
Or set your refractometer to 60 degrees Brix if you have one.
Step 5. If you want a more transparent juice, let it rest for three days (in the refrigerator), until the pulp floats to the surface
Transfer the liquid part without disturbing the pulp on the surface.
Some people prefer to preserve the pulp as the fiber promotes digestion. The choice is yours
Step 6. Add 950ml of honey
Step 7. Transfer the juice to a sterile, dry and airtight glass or plastic container
Store it in the refrigerator.
