Homemade pasta is generally prepared by hand, but it always creates a mess in the kitchen. If you have a bread maker, you can use it to make the dough effortlessly!
Ingrediants
- 1 cup of flour
- 1 large egg
- 3/4 of a teaspoon of salt
- 1 teaspoon of vegetable oil
- 1 or 2 tablespoons of water
Steps
Step 1. Put all the ingredients into the bread maker
Start by pouring just 1 tablespoon of water. Add more later to adjust the consistency of the dough if it turns out to be too hard. Select the right setting to start the dough; in any case, almost all the pre-set programs start with the dough, but you will not have to wait for the end of the whole cycle.
Optional: Use a flexible spatula to push the ingredients towards the shovels until they are blended to form the dough. Be careful if you use a wooden spatula as it may break. This step is used to speed up the creation of the dough
Step 2. If necessary, add more water after 5 minutes
Examine the dough to see if you need to add more tablespoons of water - it must be smooth and soft so that you can also work it with your hands. If you add too much water, the dough may become too soft and will stick to the sides of the machine. If so, add a few pinches of flour to make it harder until it becomes a soft ball again.
Step 3. The machine must continue kneading for 10 to 20 minutes
When the time runs out, turn it off and unplug it. Use cling film to lift the dough as you don't have to touch it with your skin. Wrap it in plastic wrap.
Step 4. Must rest for 20 minutes
Step 5. Open the cling film and start kneading the dough with your hands
If it's a bit sticky, place your hands or the dough itself in the flour and knead it until it no longer sticks. Break the dough into four or more loaves.
Step 6. Cut the dough into strips or use the pasta machine
If you own a pasta machine, you won't have any problems. Run the dough through the rollers starting with the widest setting, then making it thinner and thinner. In this way, the strips of dough will become longer and wider. If they get too loose, fold them up and pass them back into the machine. To save time, use all settings down to the thinnest. In case you have decided to make lasagna, it would not be necessary to make the pasta too thin.
Step 7. Start cutting the pasta strips
When you have prepared all the strips, the first one will have dried and you can cut it. It won't be sticky anymore. If it were, it would be difficult to make a precise cut. After creating the noodles, hang them up to dry a little longer.
- If you don't have a pasta machine, you need to roll out the dough with a rolling pin and cut the strips with a wheel to create the noodles. You can use this method to make the dough for lasagna, ravioli or any other type of pasta. Do some experiments!
- You could also use the paper shredder instead of the pasta machine.
Step 8. Cook the pasta immediately after making it, or store it in the freezer
Cook it like regular pasta by boiling it in salted water for 3 to 5 minutes.
Advice
- You can use 00 flour and seed oil, or semolina flour and olive oil. The durum wheat semolina flour gives the pasta an excellent consistency.
- If you don't have a bread maker, you can also use a food processor using the sharp blades if you don't have kneading blades.
Warnings
- Warning: the dough contains eggs, an easily perishable food. Cook or freeze the pasta immediately after preparation.
- Do not insert your hands into the running machine. Avoid moving blades.
